Cuban Black Bean Chicken Chili
This Cuban Black Bean Chicken Chili is made with Bush’s Cocina Latina Frijoles Cubanos, in a rich sauce seasoned with green bell pepper, garlic and onion.
When my son told us that 6 of his friends were coming into town to spend the night before their 4-day backpack trip to the Sisters Mountains in central Oregon, I had just a few hours to prepare a quick meal.
Instead of serving something already prepared, or costly (hello, delivered pizza), I knew I wanted to make a delicious, hot, home-cooked meal.
Sometimes I think that we, as moms, have lost the art of feeding people well. Whether we think we’re not good cooks, or we just don’t have the time, the need for eating healthy is not going anywhere.
I’ve seen that too much prepackaged, precooked, over-processed food has led to a superficial lifestyle for many families, and it just doesn’t set up good habits for healthy eating, or healthy living.
So how do you combine easy preparation for a busy family, with good, healthy recipes?
My crock pot has become one of my kitchen best friends. I know that if I have just a few hours notice, I can get a hot, delicious, healthy meal on the table. Beans are also stocked in our pantry, because there are so many options for healthy bean dishes, such Black Bean Crock Pot Lasagna, my friend Gina’s Skinnytaste Slow Cooker Black Bean Enchilada Soup, and Crock Pot Beans with Ground Turkey (yummy for a summer picnic!). It’s not always chili, but everyone loves a good pot of chili too.

Cuban Black Bean Chicken Chili
For these hungry young men, I made a delicious Cuban Black Bean Chicken Chili, made with Bush’s Cocina Latina Frijoles Cubanos Black Beans, in a rich sauce seasoned with red and green bell pepper, garlic and onion. So much flavor in this Cuban sauce (right in the can of beans), you can make a large pot (double the recipe!) with few ingredients.
Enjoying a home-cooked meal around the table reminds us that for some things in life, we have to slow down. (If you prefer to add your own veggies and spices, try BUSH’S Black Beans with green pepper, garlic, and oregano.)

Cuban Black Bean Chicken Chili
Ingredients
- 4 chicken boneless breasts, cut into thirds
- 1 quart chicken broth
- 2 cups salsa
- 2 cans Bush’s Cocina Latina Frijoles Cubanos, or * above
- 2 cups fresh cooked or frozen corn
- Salt & pepper to taste
- 1 Tbsp. cumin
- 1 tsp. red chili pepper, optional
- Cilantro
Instructions
- In a crock pot, add the chicken breasts, chicken broth, and salsa. Cook on low heat for 2-3 hours.
- Shred the chicken with a fork. Return to crock pot.
- Add the beans, corn, and spices. Let simmer on low heat for another hour.
- Serve with cilantro, sour cream, fresh tomatoes, or your favorite toppings!

Yum! I love that when we are out and about there are so many more healthy restaurants out there that try to source local, organic foods. Our bodies can tell the difference. One of my favorite things has always been feeding people, especially my girls friends. So much fun! Haven’t done it in awhile but even now, when I know my youngest is going hiking, I’ll make up something for them to take or make sure she’s buying healthy snacks. Or when my oldest texts me she’s hungry at the coffee shop…what a great excuse to see her and love on her by making a nice salad, or sandwich to deliver and sometimes for the other girls there too.
