This particular night (a couple of weeks ago) was very special, because my cousin Tom (who I was very close to growing up) came with his family, and our kids were able to meet for the very first time.
It was a night full of laughter, and a lot of catching up!
I didn’t stress about our family coming to dinner for the very first time in our home, because I do not focus on perfection. Perfection is underrated. It ruins moments of hospitality that have so much potential.
Community doesn’t start with a perfectly set table, or gourmet menu. It starts with having something small in common with each other, or a past introduction (and you want to know these people more).
Some meals are more meaningful that others, but they all offer something new. In our case, as we looked across the table and shared our stories, for me it was a huge gift.
Easy Greek Feta Salad Recipe
Today I’m sharing a super easy salad trick. Prepare your romaine lettuce and croutons dressed with parmesan cheese, lemon juice, olive oil, and then open a package of DeLallo’s Greek Feta Salad mix. Chop the olives and feta cheese, and pour the entire mixture (oil, too), onto the salad. You can drizzle balsamic if you want!
Mix and serve! (The Greek Feta Salad mix is a colorful medley of black, green and smoky Calamata olives tossed with bite-sized cubes of briny feta in a savory marinade of Greek herbs. And it is SO good!)
My cousin and I have a heritage of hospitality that runs deep in our family. Bringing our families together, so rich and fun, was a spark that was intended to be lit, that I hope will carry on into the future.

Easy Greek Feta Salad Recipe
Ingredients
- 8-12 cups romaine lettuce, torn in large chunks
- 1 cup tomatoes
- 1/2 cup red onion, chopped
- 1 package Greek Salad Mix – feta, olives in oil (DeLallo)
- 1 cup croutons
- 1 cup Parmesan cheese
- Balsamic vinegar, optional
Instructions
- In a large bowl, place the romaine lettuce. Add the tomatoes, red onion, croutons, and Parmesan cheese.
- Add the Greek Salad Mix (olive, chopped, feta cheese, and the oils)
- Toss to serve. Optional to add balsamic vinegar.
