Focaccia Bites
Enjoy Focaccia Bites with nectarine fruit, an easy party appetizer made with salami, cheese, and fresh basil.
Late summer and fall is the perfect time to serve Focaccia Bites made with nectarines. They are the perfect appetizer, a mix of soft bread and some of my other favorite ingredients, like nectrines and salami! This focaccia recipe can be made with any fruit that is in season!
Focaccia Bites
We’ve been creating some delicious and comforting appetizers lately, like these little focaccia bites. Topped with fresh basil (yum), and a drizzle of balsamic glaze, this appetizer is also on the hearty side. Focaccia bites ingredients:
- Salami: we prefer the thin-sliced
- Necatarine (you can also use fresh peaches)
- Ricotta cheese
- Focaccia bread – use one loaf
- Basil
- Balsamic glaze (we buy Delallo brand)
- Kosher salt
What fruit goes well with nectarines?
Nectarine or peach flavors pair well with almonds, and hazelnuts, cheese, and meats (like salami). Also summer berries, cherries, figs, lemon, lime and basil are fresh seasonal produce that pair well with nectarines.
How do you make Focaccia Bites with nectarine fruit?
- Cut the focaccia bread in half on a horizontal axis, then cut into 10 1’’ x 3’’ slices.
- Toast the bread under a boiler, or in a toaster, until slightly golden. Set aside.
- Divide and spread the ricotta cheese onto the focaccia toasts. Season lightly with salt, then layer the salami and nectarine. Skewer with a toothpick. Repeat until all of the toasts are made.
- Plate the appetizer and drizzle with balsamic glaze, and sprinkle with basil. Serve warm or chilled.
What is the best way to serve focaccia?
There are many ways to serve a focaccia loaf of bread.
You may have already tried my Mini Focaccia Sandwich Bites (with different ingredients than this recipe). So good!
You can also serve it along side salads or with your favorite soup. I love focaccia served with my Smoked Tomato Bacon Soup. Focaccia is delicious as a sandwich. You can also use it in a charcuterie board, and grill it with soft cheese.
Can you toast focaccia?
Yes! You can toast focaccia as you would any other bread. Think “garlic bread” and do the same with a focaccia loaf.
How do you serve a Focaccia recipe?
You can double or triple this recipe for a large gathering.
Plate the appetizer on a serving platter or a big board, and drizzle with balsamic glaze.
Next, sprinkle with basil. Serve warm or chilled.

You can pick up nectarines right now at the Farmer’s Market (here in Bend), or even at little farm stands. On the way out to Costco for me, there is a small stand I love to support.
