Easy Honey Glazed Balsamic Chicken

Last week we hosted a few friends and grilled this Honey Glazed Balsamic Chicken recipe, serving it with a peach and avocado (large chunk) salsa (or salad).

All you have to do for the salad is to serve a platter of peaches and avocados deconstructed. Cut into chunks, add fresh mozzarella balls and fresh basil, and pepper. You’ve got a delicious summer salad. (We’re still loving peaches, sooooo good!)

Honey Glazed Balsamic Chicken

Balsamic vinegar is one of my favorite ingredients, and its a delicious flavor for this chicken. We used boneless skinless chicken breasts but you could also use chicken thighs!

Buying a good quality balsamic is important. We either use DeLallo Foods or Costco brand. Drizzle it on your favorite caprese salad, too!

How to make and freeze chicken

We start with boneless skinless chicken breasts. If they are giant ones, we always cut them in half. Who can eat a big fat whole chicken breast anyway? :)

Next we tenderize the chicken. My favorite tenderizer is this OXO tool. I flip the chicken over and tenderize on both sides.

Prepare the marinade and place everything in a Ziploc bag. Now it’s ready for grilling in a couple of hours.

I also love that you can prepare the chicken and marinade and pop it in the freezer!

On days where I have no idea what we’ll eat for dinner, it’s super easy to pull a frozen bag of chicken out of the freezer, thaw, and it’s ready for grilling!

Honey Glazed Balsamic Chicken

Option to bake the chicken: Place on foil lined pan and bake at 350 degrees for 35-30 minutes (depending on how thick the chicken breasts are).
Prep Time: 2 hours 15 minutes

Ingredients
 

  • 1 cup balsamic vinegar
  • 1/2 cup honey
  • 3 Tbsp. olive oil
  • 3 cloves garlic, grated (grated ginger is good, too)
  • 1 tsp. Italian seasoning
  • 1 tsp. salt
  • 1 tsp. pepper
  • 8 boneless skinless chicken breasts, if large, cut in half

Instructions
 

  • In a small bowl, whisk together the balsamic vinegar, honey, olive oil, garlic (or ginger), seasoning, salt, and pepper.
  • Place the chicken in a deep bowl or plastic bag and pour the marinade over the top.
  • Place in the refrigerator and marinate for a minimum of 2 hours, preferably overnight.
  • If freezing, place in plastic bag (make sure and remove the air), and freeze on a flat surface.
  • Remove from freezer and thaw before grilling.
  • Grill chicken over medium high heat for 5-6 minutes, on both sides or until cooked through.
  • Pour the excess marinade in a small bowl. Baste the chicken a few times while grilling.
  • Serve with your favorite salsa or salad on the side!
