Friends, I like to think ahead to holidays and special occasions, when I’m planning out my recipes to share with you. Sometimes it’s something we are having for dinner that night.
Sometimes it’s just a yummy “bite”, like these Jicama Mint Mango Bites that we noshed on when a few friends stopped by.
Cinco de Mayo
The next holiday is Cinco de Mayo! Cinco de Mayo is a fun day to prepare Mexican food for a feast, or simply a few bites for gathering your friends. You may want to try my Honey Lime Boneless Chicken Thighs or this Mexican Charcuterie Board!
How to make Jicama Mint Mango Bites
- Cut jicama into 1-inch cubes.
- On a serving platter, layer jicama squares, mint leaf, and mango. Skewer with a toothpick!
- Squeeze fresh lime, crack fresh salt, and dust with chili powder.
The beauty of these little bites is that they don’t have to be perfect. Which means you can whip them up in no time!
This is why we host
It’s beautiful to see how the investment in relationships brings rich rewards.
Here’s a little story. We’ve been in our new town for three years now, and we’re still meeting new people. It takes work on both sides to reach out, set a date, go out to dinner, or whatever.
We’re always glad when we do this. We walk away having learned more about others, which I think the world could use a little more of!
Jicama Mint Mango Bites
Easy bites are the best place to start, if you are a reluctant entertainer.
If you can keep the “back to the basics” mentality, I’ve found that it makes entertaining much more enjoyable.
Which is why I love an easy appetizer to set out when friends walk through the door!
Happy hosting, Friends!
