Layered Apple Spinach Salad

Layred spinach salad
Here’s why I love layered salads. I take a large parfait bowl, gather my ingredients, and layer away. It’s up to you if you want to cut larger pieces, or dice the ingredients. Either way, it’s pretty!
- Spinach
- Red apples
- Hard cooked eggs (cut in half, or dice)
- Cooked and crumbled bacon (or chunks)
- Red onion, sliced
- Sliced toasted almonds
- Favorite dressing – we love Marzetti Simply 60 Dijon Honey Mustard

How to serve a layered salad
I love the beauty of a layered salad, and it’s easy to bring to a potluck or party.
But honestly, the “parfait look” is visual. If you want to be more practical, just layer the salad in a large bowl, and skip the beautiful glass, parfait bowl.
So what I do is make the salad ahead and then right before serving, I dump into a large bowl; toss and serve!
Which means, when I go to a potluck, I just take an extra large bowl with me.
Again, the large bowl is optional, but it’s messier to serve right in the parfait bowl.
TIP: I also love layering a salad in the parfait dish because it fits nicely in my fridge until serving (rather than a big huge salad bowl).
How to build community
Friends, people can be lonely this time of year. A social support is a buffer against stress, making people feel loved and valued. Connecting with others helps us build community, and create or strengthen relationships. This may be with new or old friends, family or neighbors.
Even the parents of some of your best friends.
I thought it was wonderful when my daughter told me she was driving an 80-year old to Trader Joe’s this week for a little shopping.
Not only do we need to connect and have people listen to our stories, and learn about us, it goes the other way too.
Social support means sharing advice, listening or offering a hug during stressful times, and can mean the world to another person!

Layered Apple Spinach Salad
Ingredients
- 10 oz. fresh baby spinach
- 1 large red apple, Honeycrisp is best
- 6 hard-cooked eggs, halved
- 8 strips bacon, cooked and crumbled
- 1 small red onion, thinly sliced
- Sliced toasted almonds
- Favorite dressing, we love Marzetti Simply 60 Dijon Honey Mustard
Instructions
- In a large parfait dish, layer the spinach, eggs, bacon, onion—twice. Sprinkle with toasted almonds.
- Top with fresh apples, eggs, for garnish (more small pieces of bacon, etc).
- When ready to serve, place in a large bowl; toss with dressing and serve!
