Friends, do you ever need a quick dessert recipe? I love little bites around the table, after a big meal, and I think guests love these too.
Lemon Cream Brownie Bites
For these Lemon Cream Brownie Bites, you can have just one, or two …. or three :) They are the perfect dessert to nosh on. [If you have a gluten-free guest coming, make your own Almond Flour Chocolate Brownies with a mini muffin pan!]

Ingredients for Lemon Cream Brownie Bites
- Store-bought brownie bites (or you can make your own with a brownie mix in a mini muffin pan)
- Lemon curd (I always keep on hand)
- Sour cream or mascarpone cheese
- Any kind of fruit, fresh mint, and salt is optional

We had a great dinner with friends the other night. One thing we’ve learned about hosting is that we don’t like to waste precious moments with our friends talking about meaningless stuff.
Oh, don’t get me wrong, we discuss a lot, and some pretty funny stories are often shared. But it goes deeper than that. My husband and I are diving in, investing, digging deeper, constantly forging friendships around our table.
Hosting … never a waste of time!
It makes us come alive! Honestly? It can be heavy–you hear something that tugs at your heart, or you sense a disconnection between a couple, you see pain in the eyes of parents who have struggling kids. And then at our age, we hear the weariness in the voices of friends who are caring for elderly parents.
The daily grind is real for everyone! It can wear a person down, and this is why table connection is so important, Friends.
It takes courage to open up and be vulnerable with others.
Which is why I say, hosting is never a waste of time.
How to make Lemon Cream Brownie Bites
Since I know I’m going to be asked, you can freeze the actual brownie (bites) ahead of time. But do not frost and freeze.
They would be best made right before eating. In fact, make up the lemon spread ahead of time. Give one of your guests this job:
- Add a dab of lemon cream to each brownie.
- Add a berry on top, plus a sprig of mint (optional).
- Dust with a sprinkle of salt.
- Place in the fridge and pull out when ready to serve!

Ingredients
- 20-24 brownie bites, buy in the store or make in mini muffin pan
- 1/2 cup sour cream or mascarpone cheese
- 2-3 Tbsp. lemon curd, according to how tart you like the flavor
- 1 pint fresh raspberries
- Mint, garnish
- Sprinkle of Maldon Sea Salt Flakes, optional
Instructions
- Place the brownie bites on a large platter.
- Add a dab of lemon cream to each brownie.
- Place a berry on top, plus a sprig of mint (optional).
- Place in the fridge and pull out when ready to serve.
- Dust with a sprinkle of salt right before serving.

How do you make the lemon cream? ย Mix sour cream and lemon curd I guess but didn’t see it as part of the recipe.
