Lettuce Wrap Board

Everyone loves lettuce wraps! My friend Ree Drummond makes the best, but you just may want to try our easy “board” idea today!

There are so many ingredients and fillings that can be used to create a delicious lettuce wrap. Because there are so many customizable components, it really makes sense to serve them all on a board. This lettuce wrap board is one of my favorites to throw together for a quick summer lunch or dinner. Grab your favorite “big board” size!

While we like our vegetables cut into matchsticks, you can simply chop them into bite-size pieces to speed up the preparation process. You can substitute any of the ingredients for you favorites! I also like to use up leftovers in lettuce wraps, so don’t shy away from using leftover grilled meats, veggies, noodles, rice, and more!

Ingredients for lettuce wrap board

Let’s get started with this easy shopping list:

  • Butter leaf lettuce
  • Meat or meat alternative (tofu, rotisserie chicken, shrimp, or steak)
  • Rice noodles (or cooled white rice)
  • Thai chili sauce
  • Shredded carrot
  • Sugar snap peas
  • Persian cucumber (these are the tiny ones, but you can also use regular)
  • Bell pepper
  • Mango (Mm-m-m … this is what makes a lettuce wrap so good!)
  • Radishes
  • Mint, cilantro, green onion
  • Pickled red onion (or other pickled ingredient) – grab our recipe
  • Roasted peanuts or cashews

Ingredients for homemade peanut sauce:

If you don’t use store-bought, make your own peanut sauce. It’s easy!
It only takes 5 minutes to make!

  • Soy sauce
  • Fish sauce
  • Creamy peanut butter
  • Sesame oil
  • Rice vinegar
  • Lime juice
  • Honey
  • Canola or neutral oil
  • Salt to taste

How do you put together a Lettuce Wrap Board?

On a food safe board, arrange the small bowls of sauces, veggies, peanuts, and ending with a large bowl of the chicken chunks.

Fill in open areas with lettuce leaves, rice noodles, and more fresh herbs.

Serve the board! Guests fill lettuce leaves with their favorite toppings, fold up like a taco, and enjoy!

Tips and substitutions:

  • Add avocado and lime slices to the board.
  • These meats are great: tofu, rotisserie chicken, shrimp, or steak
  • As always – this is great for a party. Serve as an appetizer or a main dish.
  • Make on the 20-inch board, or you can double the recipe and serve on the 26-inch BIG BOARD.

Ingredients
 

  • 1 head butter leaf lettuce
  • 2 cups meat or meat alternative, tofu, rotisserie chicken, shrimp, or steak—leftovers fine
  • 4 servings rice noodles, or cooled white rice
  • ½ c peanut sauce, store bought or home made, recipe below
  • ½ c Thai chili sauce
  • 1 c shredded carrots
  • 1 c sugar snap peas, chopped
  • 1 large Persian cucumber, sliced (or an English cucumber, diced)
  • 1 bell pepper julienned
  • 1 mango, sliced
  • 2 radishes, cut into matchsticks
  • Mint, cilantro, green onion
  • c pickled red onion, or other pickled ingredient
  • Roasted peanuts or cashews, chopped

Sweet and Savory Peanut Sauce

  • 2 ½ tsp soy sauce
  • 1 ½ tsp fish sauce
  • c creamy peanut butter
  • ½ tsp sesame oil
  • ½ tsp rice vinegar
  • 1 tsp lime juice
  • 1 Tbsp honey
  • 1 Tbsp canola or neutral oil
  • Salt to taste

Instructions
 

  • Make the peanut sauce.
