Meatloaf Casserole

Gather these ingredients
- Ground beef – lean
 - Breadcrumbs
 - Eggs
 - Worcestershire sauce
 - Yellow onion – diced
 - Garlic powder
 - Parsley
 - Salt
 - Black pepper
 - Mashed potatoes
 - Sharp cheddar cheese – shredded
 - Bacon – cooked and crumbled
 - Chives – finely diced
 

How to make Meatloaf Casserole
- Preheat the oven to 400 degrees F.
 - Mix together (in a large bowl) the beef, breadcrumbs, eggs, Worcestershire sauce, garlic powder, dried parsley, salt and pepper. Use your hands to mix everything together, but make sure to not over-mix.
 - Press the meatloaf mixture into the bottom of a 9×13 inch baking dish.
 - Spread the mashed potatoes over the top of the meatloaf layer.
 - Sprinkle cheese and bacon over the top of the potatoes.
 - Cover with foil and bake for 25 minutes.
 - Uncover and bake for an additional 10-15 minutes.
 - Remove from the oven and let cool, then top with fresh chives and cut into squares.
 

Tips & substitutions
- You can use sweet potatoes instead of white potatoes.
 - You can replace ground beef with ground turkey.
 - Use your favorite type of cheese.
 - You can top with green onions instead of chives.
 - To save time, bake the potatoes ahead of time. Once cooled, peel and mash them with butter, milk, salt and pepper.
 - Bake 6 extra large potatoes ahead of time. Cool, peel, and mash with ¼ cup butter and ½ cup milk, plus add salt and pepper.
 

Serving suggestions
This delicious Meatloaf Casserole can be served with a greenhouse salad and pumpkin butter cake for dessert.

Storage
Store any leftover casserole in an airtight container in the refrigerator for up to 3 days.

Ingredients
- 2 pounds lean ground beef
 - ⅔ cup breadcrumbs

 - Using your hands, mix everything together but do not overmix.

 - Spread the mashed potatoes over the top of the meatloaf layer.
 - Load up the potatoes by sprinkling all of the sprinkled cheese, and then bacon, over the top.
 - Cover with foil and bake for 25 minutes.
 - Uncover and bake for an additional 10-15 minutes.
 - Remove from the oven and let cool slightly, top with fresh chives, cut into squares and serve.
 - Optional to serve with more toppings!

I would like to make this for a large potluck gathering but when I select the 3x option, it only changes the amount of the ingredients and not the size of the baking dish or the baking time. Please advise – many thanks!
