Friendships donโt just happen
My friend Krissy and I made this salad together last week. Weโve been friends since 9th grade, and weโre lucky enough to live in the same city. Well, actually only one mile from one another. I think back to our friendship over the years, and it makes me smile.
Friendships donโt just happen. We kept making time for each other from the beginning, investing and getting to know each other. Now 40+ year later, we laugh about our earlier memories and the silly things we did as teenagers. Even from different stages, in the busiest years of our lives, we made contact.
Now we get to share our lives in a more intimate way, as old ladies. HA, kidding, of course. We cook together, share parties together, and the bottom line is that we just care about each otherโs families so much.
We both moved a few years ago to the same town, and we didnโt know that the other was even considering this. What a great surprise for both of us.
Rich relationships nutured over decades
Jen Hatmaker said over on her Instagram โฆ
โWhat else is life if not rich relationships nurtured over decades? What else matters besides the meaningful connections that hold steady through winsom losses, changes, and sorrows? This is the stuff! These are the goods. This is what will last, what we will never, not one minute, regret investing in. Our careers and seasons will ebb and flow, โฆ but here we still are, women who love each other with the intensity of a thousand fiery suns.โ
I couldnโt have said it any better. In fact, I think about this with many friends that Iโve known for for 40+ years. I truly am blessed.
So Krissy and I dug into this salad after we made it โฆ :)
Ingredients for Shrimp Layered Salad
You bring it to a party like this, and right before serving, itโs optional to pour into a giant bowl.
Ingredients are lettuce, tomatoes, black olives, corn, red onion. And then green pepper, a tub pico de gallo cooked baby shrimp and corn chips.
You can add guac, sour cream, and set out your favorite dressing or Ranch dressing!
Donโt forget the habanero pepper, for garnish!
Or, just have people scoop it out. That is the problem with a beautiful trifle bowl. They are not quite as functional. You know what I mean?
Thereโs something about sharing your space and food with others that creates a different type of community and relationship with people. Weโve had many meals now with Krissy and her family. In fact, they are family now.
Mexican Shrimp Layered Salad
I grew up in a home centered around food and constant entertaining. My parents made everyone feel like family. Mom made lots of salads for company, salads like Layered Bacon Pea Salad Recipe and Pimiento-Stuffed Olive Three Bean Salad and Best Potato Salad.
For summer hosting coming up, think about your friendships, new neighbors or people youโd like to have over, ones you can make an intentional focus, and make this salad!
