Easy Mexican Salad
This will be hit at any party, not just for taste, but it’s also a beautiful presentation in a glass trifle bowl!
In a trifle bowl or large glass bowl, layer the lettuce, tomatoes, olives, corn, red onion, green pepper, pico de gallo, and cooked baby shrimp.
Don’t forget the guac and chips on top.
You can also serve it with a side of your favorite dressing. (Like Briannas Lime Cialantro, or make your own Mexican dressing.)

Friendships don’t just happen
My friend Krissy and I made this salad together last week. We’ve been friends since 9th grade, and we’re lucky enough to live in the same city. Well, actually only one mile from one another. I think back to our friendship over the years, and it makes me smile.
Friendships don’t just happen. We kept making time for each other from the beginning, investing and getting to know each other. Now 40+ year later, we laugh about our earlier memories and the silly things we did as teenagers. Even from different stages, in the busiest years of our lives, we made contact.
Now we get to share our lives in a more intimate way, as old ladies. HA, kidding, of course. We cook together, share parties together, and the bottom line is that we just care about each other’s families so much.
We both moved a few years ago to the same town, and we didn’t know that the other was even considering this. What a great surprise for both of us.
Rich relationships nutured over decades

I couldn’t have said it any better. In fact, I think about this with many friends that I’ve known for for 40+ years. I truly am blessed.
So Krissy and I dug into this salad after we made it … :)
Ingredients for Shrimp Layered Salad
You bring it to a party like this, and right before serving, it’s optional to pour into a giant bowl.
Ingredients are lettuce, tomatoes, black olives, corn, red onion. And then green pepper, a tub pico de gallo cooked baby shrimp and corn chips.
You can add guac, sour cream, and set out your favorite dressing or Ranch dressing!
Don’t forget the habanero pepper, for garnish!
Or, just have people scoop it out. That is the problem with a beautiful trifle bowl. They are not quite as functional. You know what I mean?
There’s something about sharing your space and food with others that creates a different type of community and relationship with people. We’ve had many meals now with Krissy and her family. In fact, they are family now.

I grew up in a home centered around food and constant entertaining. My parents made everyone feel like family. Mom made lots of salads for company, salads like Layered Bacon Pea Salad Recipe and Pimiento-Stuffed Olive Three Bean Salad and Best Potato Salad.

Mexican Shrimp Layered Salad
Ingredients
- 8 oz. lettuce, shredded
- 6 Roma tomatoes, diced
- 1 can black olives, drained
- 1 can corn, drained
- 1 red onion, sliced
- 1 green pepper, sliced
- 1 tub pico de gallo
- 1 pound cooked baby shrimp
- Crushed corn chips
- Bowl of guac ranch dressing, on the side or favorite dressing
- 1 habanero pepper, for garnish
Instructions
- In a trifle bowl or large glass bowl, layer the lettuce, tomatoes, olives, corn, red onion, green pepper, pico de gallo, and cooked baby shrimp.
- Add guacamole on top and garnish with a habanero pepper.
- Serve other salad dresssings on the side!
