Minted “Happy Owl-o-Ween” Party and No-Bake Peanut Butter Coconut Cookies

There are so many cute owl figures in the stores right now, plus I’m crushing big time on the big White Owl that lives in the trees behind our house. We haven’t heard him hoo-hooing in a while, but we know he’s there.
Today I’m sharing all the details for a simple Halloween Owl-o-Ween appetizer party, plus this No-Bake Peanut Butter Coconut Cookies recipe.

Haggis (our Cairn Terrier – aka Toto) wasn’t too sure he was ready for Halloween this year.

Apple cider and water for drinks, but you could surely add wine or even make a hot cider.

No baking! And, today is National M&M Day!
You can even pick out the brown, yellow, and orange M&M’s if you have the time, to make them very Halloween-ish!

No-Bake Peanut Butter Coconut Cookies
Ingredients
- 1 cup dry oatmeal, I used old-fashioned
- 1 cup coconut
- 3/4 cup peanut butter
- 1/2 cup whole wheat flour
- 1/2 cup baking M&Ms
- 1/3 cup honey
- 1 tsp. vanilla
Instructions
- In a large bowl, mix all ingredients together. Cover and chill in the refrigerator for about 30 minutes.
- With a medium (1-inch) cookie scoop, scoop and roll the balls and place on a parchment-lined cookie sheet. Refrigerate and store in an airtight container. Good for about 1 week.
- Makes 24 balls.
