I know this is a simple recipe, but we’ve been on a roasted broccoli kick lately. It’s delicious on salads, or you can eat it as a snack (good with a little dip-in ranch dressing).
Ingredients for oven roasted broccoli
Roasting broccoli is super easy, and for this recipe all you need are these ingredients:
- Broccoli florets (we often buy the big bag at Costco)
- Olive oil
- Salt and pepper

It contains a lot of fiber, vitamin C, and a surprising amount of protein, too.
Should I steam broccoli before roasting it?
To ensure that you have super-tender stalks when you’re done cooking the broccoli, try steaming the broccoli before roasting it. I often steam sweet potatoes, or any potatoes, right on the stovetop (with a little bit of water). Check out how I do it in this Sweet Potato Ground Turkey Meat Recipe.
To hurry up the cooking process, try the microwave!
To steam broccoli: Place broccoli florets in a microwave-safe bowl with 2 tablespoons of water; cover with plastic wrap and microwave for about one minute. Check for tenderness, and microwave additional minute.
What is the best oil for roasting vegetables?
Our number one oil is olive oil, or we use ghee. It helps the food cook to a nice crispiness and gives a very good flavor.
How to roast broccoli
- Cut away the outer layer of the broccoli stem and discard. If the florets are huge, cut in halves, or quarters. In a large bowl, toss the florets in the oil.
- Pour the broccoli onto the sheet and season with salt and pepper—stir with a spoon or spatula to distribute the salt and pepper evenly. Return the sheet to the oven for 10-12 minutes, or until stems are tender and there is some browning. Midway through baking, stir the broccoli and return back to the oven.
- When the broccoli has reached your desired doneness, remove from oven and serve warm, as a healthy and simple side dish!

Ingredients
- 1 lb broccoli florets, equal in size (preferably about 3/4-1’’ thick)
- 2 1/2 T olive oil, or other oil
- Salt and pepper to taste
Instructions
- Place a large rimmed baking sheet on the bottom rack of the oven and preheat to 425 degrees F.
- In a large bowl, toss the florets in the oil.
- Using a mitt, remove the pan from the oven. Pour the broccoli onto the sheet and season with salt and pepper—stir with a spoon or spatula to distribute the salt and pepper evenly. Return the sheet to the oven for 10-12 minutes, or until stems are tender and there is some browning. Midway through baking, stir the broccoli and return back to the oven.
- When the broccoli has reached your desired doneness, remove from oven and serve warm, as a healthy and simple side dish!

Have you tried air fryer broc? OMW! I use avocado oil with varied seasonings (to compliment meal), 400ยฐF for about 5 minutes, tossing midway. So fast, easy, super-easy cleanup, and so tasty! (We like a little crunch in our broccoli, so cook times can vary.)
