Friends, perfect for summer, don’t you just love a good snack? One of our favorite appetizers to set out for easy entertaining is Pineapple Black Bean Guacamole!

Pineapple Black Bean Guacamole

Here’s what you need to make this dip:

  • Large avocados
  • Green salsa or salsa verde
  • Sour cream
  • Fresh pineapple or canned crushed pineapple
  • Black beans
  • Jalapeno chile pepper
  • Red onion, cilantro, garlic, and lime
  • Salt, ground cumin, and dried cilantro

Getting ready for company

This past weekend I was getting ready for company, doing yard work, changing sheets, cleaning, planning a dinner party menu. Actually, the first summer party of the year is the one that sets the stage for the next few months, and many festive evenings. All that spring cleaning turns into getting the outdoor furniture, yard, and beds ready to enjoy.

For us, we enjoy outdoor entertaining from March until late October. Of course there are a few rainy weeks in between, like this past week. When do we ever get rain in July? We had a giant storm come through and I’m still pulling pine needles from the pool and garden beds.

It’s so easy to get lost in our thoughts when getting ready to entertain, at least for me.

My mind shuttles back and forth, with thoughts of worry and silly things, like, what if they don’t like us (when it’s a new family coming), or what if we overcook the meat (I mean, how often do we really burn the meat?), or what if they see our bathroom? (yes, we are ripping the wallpaper off the walls in our bathroom and it’s a mess), or what if they see my dirty oven (I always forget how to use the self-clean feature on my oven … I know, where’s the manual?) …. these kind of silly thoughts.

Not to impress, but to welcome

The whole point of entertaining is not to impress, but to welcome these wonderful people into our home. Taking it a step further, to learn more about them. We in turn grow, and become less lonely.

I’ve read a few books by Henri Nouwen, and have loved them all. This quote says a lot about people and hospitality:

“To live a spiritual life we must first find the courage to enter into the desert of our loneliness and to change it by gentle and persistent efforts into a garden of solitude. The movement from loneliness to solitude, however, is the beginning of any spiritual life because it it is the movement from the restless senses to the restful spirit, l aye? from the outward-reaching cravings to the inward-reaching search, from the fearful clinging to the fearless play.” — Henri J.M. This party can set me free

So … back to preparing for company, and the colors orange and blue—beautiful, freeing colors that remind me that this party can actually set me free.

We push past the silly thoughts and feelings and we embrace the whole point of entertaining … to welcome our guests with a full heart of love (mixed together with some really good food).

I’ve set a simple table (with orange and blue) with this in mind. It’s not about all the fine details, but it’s really about the sweetness of the people coming into our lives for a few hours on a hot summer evening.

Pineapple Black Bean Guacamole

Ingredients

  • 3 large avocados, halved, seeded, and peeled
  • 1/2 cup green salsa, salsa verde
  • 1/4 cup sour cream
  • 1 can finely chopped fresh pineapple or canned crushed pineapple, drained
  • 1 15 oz can Bush’s black beans, rinsed and drained
  • 1 fresh jalapeno chile pepper, seeded and finely minced
  • 1/2 cup finely chopped red onion
  • 1/2 cup chopped fresh cilantro
  • 3 large garlic cloves, minced
  • 3 Tbsp. lime juice
  • 1/2 tsp. salt
  • 1 tsp. ground cumin
  • 1 Tbsp. dried cilantro

Instructions

  • In a large bowl mash avocados. Stir in salsa and sour cream until combined. Stir in pineapple, beans, jalapeno, onion, cilantro, garlic, lime juice, salt, and cumin.
  • Cover and chill for 2 hours or until ready to serve. Sprinkle with dried cilantro. Serve with tortilla or pita chips.
