Awhile back, our family watched “Minimalism: A Documentary About the Important Things.” Part of downsizing for us (3 years ago) meant less stuff, but also more music, outdoor adventures, meals around the table with old friends and new, and more caring about other people, investing in their lives.
I’ve been thinking about the casual dinners we’ve hosted since we’ve lived in our cozy mountain home. So many great memories around the table.

What are marble potatoes?
Marble potatoes are any variety of young, tender potatoes. They are generally smaller, and picked sooner than new potatoes.
How long do you cook marble potatoes?
- Roast the potatoes in a very hot oven for about 30 minutes.
- If short on time, cut potatoes in half and cut the roasting time down.
Leave your expectations at the door
Quite honestly, I just don’t have any expectations anymore when we have company, except that I cook recipes that are familiar, and I expect that we will have a sweet time around the table. We always do. Even in the case of a conversation where you may not agree, we can all be civil with one another and have a lot of fun.
Our friends Joan and Peter are some of our favorite friends to dine with. They are the best for telling stories about themselves, in such a funny way, and not elevating themselves. I mean telling like making fun of themselves. They are some of the most humble people that we know. We are so grateful for them in our lives.
Their attitude is so contrary to perfection, the unrealistic expectations that can quickly steal our peace and joy.
I once had a friend who threw out the pie right before the company came, because it was too toasty on top.

Roasted Lemon Thyme Balsamic Marble Potatoes
Ingredients
- 2 pounds marble potatoes, washed (larger potatoes halved)
- ¼ c olive oil
- 2 Tbsp fresh thyme
- 2 Tbsp fresh chopped basil
- 1 cup pitted kalamata olives, halved
- 2-3 cups cherry tomatoes, halved
- 6 oz fresh mozzarella cheese, cut into fourths
- Balsamic to drizzle
- salt and pepper to taste
- 1 wedge lemon
Instructions
- Preheat oven to 450 degrees.
- Toss potatoes in olive oil, then spread on a baking sheet and sprinkle with salt and pepper. Bake for 30-40 minutes, or until tender.
- Remove from oven and toss with olives, and tomatoes. Lay on platter and top with mozzarella, balsamic, herbs, a squeeze of fresh lemon, and fresh cracked pepper.
