Friends, I bought our first strawberries at the market this past week! I was in heaven! So of course this Strawberry Breakfast Yogurt Cake Recipe was on the menu.
Strawberry Breakfast Yogurt Cake Recipe

Strawberry Breakfast Cake Ingredients
Inspired by Raspberry Yogurt Cake, this breakfast cake is perfect for summer company!
All you need are these ingredients for this cake:
- Butter
- Sugar
- Eggs
- Plain Greek yogurt
- Almond extract (optional)
- Vanilla extract
- All-purpose flour
- Salt + cinnamon
- Baking powder + baking soda
- Fresh strawberries
- Powdered sugar (for dusting)
How to make breakfast cake
- Butter a 10-inch springform pan, and line it with buttered parchment paper.
- Combine butter, sugar, eggs, yogurt, almond and vanilla extracts. Mix well. Add flour, salt, baking powder, baking soda, and cinnamon and mix gently by hand. Do not over-mix.
- Put the batter into the springform pan.
- Toss the strawberries with the sugar (unless they are really, really sweet berries, you can use less sugar), and sprinkle over the cake.
- Bake until toothpick inserted in the center comes out clean. Let cool and transfer to a cake plate.
The middle will be slightly soft and gooey. Dust with powdered sugar and serve!

What springform pan to use?
So fresh and delicious, I love this springform pan. Here’s my RED Nordic Ware Leak Proof Springform Pan, but you can also buy this adorable Heart Springform 10-Inch Pan (perfect for Valentine’s Day!)
Let it sit for at least an hour, as the center is very soft (but the best part).

Ingredients

- 2 cups fresh strawberries, sliced in small pieces
- Powdered sugar, for dusting
Instructions
- Preheat oven to 350 degrees. Butter a 10-inch springform pan, and line it with buttered parchment paper.
- In a large mixing bowl, combine butter, sugar, eggs, yogurt, almond and vanilla extracts. Mix well. Add flour, salt, baking powder, baking soda, and cinnamon and mix gently by hand. Do not over-mix.
- Put the batter into the springform pan.
- Toss the strawberries with the 1/4 cup sugar (unless they are really, really sweet berries, you can use less sugar), and sprinkle over the cake.
- Bake for 45-50 minutes, or until toothpick inserted in the center comes out clean. Let cool for 10 minutes and transfer to a cake plate. The middle will be slightly soft and gooey. Dust with powdered sugar and serve!
Can you replace the all purpose flour with almond four?ย
Hi Vikki, I have not tried using almond flour for this recipe.
This cake is delicious! I used regular yogurt and it turned out great! Might have to freeze some of this so as not to eat it too quickly :-). Thanks for the recipe!
Can I make this in a different type of pan as I donโt have a springform? Just for hubby & me so it doesnโt need to have a pretty presentation.

Hi Joanie. Do you mean bake the night before? Yes. As for preparing the batter the night before, I have never tried this.
I saw your recipe this morning and had everything to make it, with a few modifications, and it is delicious! I only had berry Greek yogurt and sour cream, so I used both, omitted the cinnamon and added the zest of one lemon. I didn’t sugar the berries. SO GOOD! Thanks for the recipe.ย
I used 1/2 the amount of butter and Trader Joe’s brand white-wheat flour and it came out delicious. I needed to cook longer because the strawberries released so much liquid so I might try and cut the strawberries to 1 1/2 cups next time.

I have not tried it in any other pans. Use parchment paper for sure, and most likely the cooking time may change a bit. Come back and tell me how it turns out! :)
