Friends, I bought our first strawberries at the market this past week! I was in heaven! So of course this Strawberry Breakfast Yogurt Cake Recipe was on the menu.

Inspired by Raspberry Yogurt Cake, this breakfast cake is perfect for summer company!

The lull between the beginning of the year and spring is, well, a bit drab and dull. But honestly, I’ve been trying to daily pick up my phone and call someone, send a snail mail card or letter, or do something new. Like reach out to a person I may have been introduced to (hey, do you want to have coffee or lunch), go on a new hike with my husband, try a new recipe, invite new people over for dinner.

We had friends in town over the weekend, so we invited them for breakfast one morning.

Let it sit for at least an hour, as the center is very soft (but the best part).

Strawberry Breakfast Yogurt Cake Recipe

Ingredients:

  • 1/2 cup butter, softened, plus more for the pan
  • 1 cup sugar, plus 1/4 cup for the strawberries
  • 3 eggs
  • 1 1/2 cup plain Greek yogurt
  • 1 tsp. almond extract
  • 1 tsp. vanilla extract
  • 2 cups all-purpose flour
  • 1 tsp. salt
  • 1 tsp. cinnamon
  • 1 1/2 tsp. baking powder
  • 1 tsp. baking soda
  • 2  1/2 cups fresh strawberries

Directions:

  1. Preheat oven to 350 degrees. Butter a 10-inch springform pan, and line it with buttered parchment paper.
  2. In a large mixing bowl, combine butter, sugar, eggs, yogurt, almond and vanilla extracts. Mix well. Add flour, salt, baking powder, baking soda, and cinnamon and mix gently by hand. Do not over-mix.
  3. Put the batter into the springform pan.
  4. Toss the berries with the 1/4 cup sugar (unless they are really, really sweet berries, you can use less sugar), and sprinkle over the cake.
  5. Bake for 45-50 minutes, or until toothpick inserted in the center comes out clean. Let cool for 10 minutes and transfer to a cake plate. The middle will be soft and gooey. Dust with powdered sugar and serve!

  2. I definitely will have to make this recipe. Will it only work in a springform pan? or is that just the best option?

    • I have not tried it in any other pans. Use parchment paper for sure, and most likely the cooking time may change a bit. Come back and tell me how it turns out! :)

  5. I used 1/2 the amount of butter and Trader Joe’s brand white-wheat flour and it came out delicious. I needed to cook longer because the strawberries released so much liquid so I might try and cut the strawberries to 1 1/2 cups next time.

  6. I saw your recipe this morning and had everything to make it, with a few modifications, and it is delicious! I only had berry Greek yogurt and sour cream, so I used both, omitted the cinnamon and added the zest of one lemon. I didn’t sugar the berries. SO GOOD! Thanks for the recipe.
