Strawberry Breakfast Yogurt Cake Recipe

Friends, I bought our first strawberries at the market this past week! I was in heaven! So of course this Strawberry Breakfast Yogurt Cake Recipe was on the menu.

Breakfast Cake

Inspired by Raspberry Yogurt Cake, this breakfast cake is perfect for summer company!

The lull between the beginning of the year and spring is, well, a bit drab and dull. But honestly, I’ve been trying to daily pick up my phone and call someone, send a snail mail card or letter, or do something new. Like reach out to a person I may have been introduced to (hey, do you want to have coffee or lunch), go on a new hike with my husband, try a new recipe, invite new people over for dinner.

To liven things up, clean out a closet, move your furniture around (or art work), make your own DIY succulents, buy yourself some flowers at the store

It’s easier to hunker down with Netflix (hand raised!), but DO IT. Make yourself reach out, try something new, have someone in. (I just bought these 3 succulents in a pack from Costco! Aren’t they pretty?)

The quiet, drab times of winter are a good time to bake a cake, plan a brunch, pull out a puzzle (I love doing a puzzle with a friend), finish a project, read a new book.

For me, I just made this Strawberry Breakfast Yogurt Cake Recipe.

We had friends in town over the weekend, so we invited them for breakfast one morning.

Strawberries in January make me HAPPY! (I promise, I did not let his nose touch them. But honestly, HE puts his nose in everything!)

So fresh and delicious, I love this springform pan. (You can also buy these 3 sizes in red, I especially love the heart springform pan in this set!)

Let it sit for at least an hour, as the center is very soft (but the best part).

Strawberry Breakfast Yogurt Cake Recipe

  • 1/2 cup butter, softened, plus more for the pan
  • 1 cup sugar, plus 1/4 cup for the strawberries
  • 3 eggs
  • 1 1/2 cup plain Greek yogurt
  • 1 tsp. almond extract
  • 1 tsp. vanilla extract
  • 2 cups all-purpose flour
  • 1 tsp. salt
  • 1 tsp. cinnamon
  • 1 1/2 tsp. baking powder
  • 1 tsp. baking soda
  • 2  1/2 cups fresh strawberries

  • Preheat oven to 350 degrees. Butter a 10-inch springform pan, and line it with buttered parchment paper.
  • In a large mixing bowl, combine butter, sugar, eggs, yogurt, almond and vanilla extracts. Mix well. Add flour, salt, baking powder, baking soda, and cinnamon and mix gently by hand. Do not over-mix.
  • Put the batter into the springform pan.
  • Toss the berries with the 1/4 cup sugar (unless they are really, really sweet berries, you can use less sugar), and sprinkle over the cake.
  • Bake for 45-50 minutes, or until toothpick inserted in the center comes out clean. Let cool for 10 minutes and transfer to a cake plate. The middle will be soft and gooey. Dust with powdered sugar and serve!
