Ingredients for Strawberry Brie Crostini:

  • Full size baguette
  • Butter (or olive oil or both)
  • Good quality Brie
  • Strawberry preserves (jam or jelly)
  • Fresh rosemary

How to make a crostini

When making the crostini, I love to use butter. But you can also drizzle with olive oil. Or, both! In a small bowl, mix both butter and olive oil together and brush onto the crostini.

  1. For this recipe, I broil the bread slices on a rack in the upper middle position of the oven.
  2. Place the baguette slices in a single layer on the baking sheet.
  3. Spread with butter (or oil or both) and broil on HIGH for 1-2 minutes, until lightly brown, on one side only.

Always a party favorite

When our friends were coming to visit us, I quickly planned out the dinner we’d be serving. Grilled steak, salad, and this Strawberry Brie Crostini Appetizer.

You can’t go wrong with crostini and Brie.

And you don’t have strawberry jam? What kind of jam do you have in the fridge? Any flavored jam pairs well with Brie – I promise!

I really think the fresh herb on top makes this recipe.

Also, we did not heat up the Brie. With this small breakfast round that we used (nice and soft), we added it to the warm, out of the oven, crostini with the jam. You can also try these Strawberry Brie Tartlets!

Finely chop the fresh rosemary and sprinkle.

Ingredients
 

  • 1 full size baguette, sliced into ¼ inch slices
  • 3 Tbsp butter, melted
  • 1 15 oz good quality Brie wheel, sliced into ¼ slices
  • 1 cup strawberry preserves, jam or jelly
  • Fresh rosemary, finely chopped

Instructions
 

  • Preheat oven to BROIL, with rack on upper middle position. On a baking sheet, place the baguette slices in a single layer. Spread with butter and broil on HIGH for 1-2 minutes, until lightly brown, on one side only. Remove from oven.
  • While the crostini are warm, spread on the strawberry jam, and then lay down a slice of Brie.
  • Fill a platter with Strawberry Brie Crostini. Lastly, sprinkle with finely chopped rosemary and serve!
