This time I used these cute paper loaf pans.
Mini chocolate chips (my new Nestle favorite baking chips!) and fresh strawberries.
So sweet for the season.
For Valentine’s Day today, I’m thinking about all the special friends in my life. My thoughts go back to my teen years, those influential in my life like my best friend, Lisa, my 10 roommates (and 12 weddings that I was in), in my 20s, my sisters, parents, so many close friends back then who are still dear to my heart today. And then, my husband and 3 amazing kids. I am truly blessed.

Strawberry Chocolate Chip Bread Recipe
Ingredients
- 3 cups all-purpose flour
- 2 cups sugar
- 1 tsp. baking soda
- 1 tsp. salt
- 1 tsp. ground cinnamon
- 1 cup canola oil
- 4 eggs, lightly beaten
- 1 tsp. vanilla extract
- 1 tsp. almond extract
- 1 1/2 cups mini chocolate chips
- 2 1/2 cups diced strawberries
Instructions
- Preheat oven to 350ºF. Spray loaf pans with nonstick cooking spray.
- In a large bowl or the bowl of a stand mixer, combine the flour, sugar, baking soda, salt and cinnamon. Stir in the vegetable oil, eggs, vanilla, and almond extract. The batter will be thick. Stir in the strawberries.
- Place the batter in the prepared pans. Bake until a tester inserted in the center comes out clean, 35-45 minutes (depending on the size of the pan). Cool the loaves in the pans for 10-15 minutes, before turning out onto a cooling rack to cool completely.
