Tahini Dried Cherry Monster Cookies

They’re called “monster” cookies because monster cookies are loaded with peanut butter, oats, chocolate chips, and more!

My surprise ingredients, besides tahini, are tart cherries and white chocolate. I love this combo! You may have already tried my Vegan Tahini Coconut Chocolate Cookies.

Usually monster cookies have peanut butter, but today we’ve replaced the peanut butter with tahini!

Monster cookies are peanut butter cookies with oats, chocolate chips, and M&Ms. This easy monster cookie recipe yields warm, chewy cookies.

The white chocolate is gooey if you eat them warm!

And true confession here. I love cookies hot out of the oven, frozen, chewy, or crunchy. And of course the dough is the very best :)

There are only 24 hours in a day. And when we feel rushed and constantly out of time, we often say, I wish there were more hours in the day! Right? Yes, hand raised.

Changing things up

We really need to look at our days and see if we are content with the way we spend our time and priorities.

I loved listening to this podcast on resting one day a week, because it made me stop and evaluate many things.

A friend of mine says, “let’s pick up the phone or pick a new plan, or pick up the pieces.”

We need to do something different, even if it’s small, to move you closer to who we want to be!

I say start small and invite a friend over. Open our hearts and hands.

How to make monster cookies

So for a light summer dessert (or anytime dessert), serve these Tahini Dried Cherry Monster Cookies, or keep the dough in the fridge, ready for baking!

  1. Using a cookie scoop, portion out the batter onto the baking sheet and then gently flatten them using the palm of your hand.
  2. You can divide balls into 12 large or 24 small cookies.
  3. Sprinkle with a pinch of flake salt.

These would be delicious served with my Thai Red Curry Peanut Sloppy Joes or One-Pot Chicken Vegetable Soup.

Ingredients
 

  • 1/2 cup tahini
  • 2/3 cup chopped, toasted pecans
  • 1/3 cup coconut sugar
  • 1/8 cup almond milk
  • 1 1/2 cups quick rolled oats
  • 1 teaspoon cinnamon
  • 1/4 teaspoon nutmeg
  • 1/2 teaspoon sea salt
  • 1/3 white chocolate chunks
  • 1 egg
  • 3/4 cup dried cherries
  • Flake salt to garnish

Instructions
 

  • Preheat oven to 350 degrees For best results, line a baking sheet with parchment paper.
  • In a medium mixing bowl or stand mixer, add tahini, coconut sugar, almond milk, vanilla, egg, cinnamon, nutmeg, and salt. Gently blend together.
  • Add in oats, pecans, white chocolate, and cherries. Mix the batter until all of the ingredients are evenly incorporated.
  • Using a cookie scoop, portion out the batter onto the baking sheet and then gently flatten them using the palm of your hand. [Divide balls into 12 large or 24 small.]
  • Sprinkle with a pinch of flake salt.
  • Bake cookies for 10-12 minutes. Allow to cool for another 10 minutes before serving. ENJOY!
