Tomato Cucumber Herb Salad
Tomato Cucumber Herb Salad is a fresh tomato cucumber salad with fresh herbs, served with pita bread and a tangy tahini sauce.
Friends, this salad idea is so refreshing, easy, healthy, crisp and a flavorful! It’s also a unique appetizer! This makes the perfect side salad, appetizer, or main dish (add chicken or fish) for dinner!

Ingredients for a salad board
Today, all you need are these easy ingredients for this board:
- Pita breads and pita chips
- English cucumber
- Roma tomates
- Parsley
- Fresh dill
- Capers
- Red onion
- Feta cheese
- Dates
- Tahini dressing (see recipe)
Mediterranean Salad
We mixed together this Mediterranean Salad and served it with the pita chips and bread on a board. But you can also use a platter or tray.
We all know that eating the Mediterranean way (not really a diet, but a way), is good for us! So today we took simple ingredients with tomatoes and cucumbers, to create a simple board or tray: A Tomato Cucumber Herb Salad.

Tomato Cucumber Herb Salad
Ingredients
- Pita chips
- 3-4 pita breads, cut into wedges
- 1 English cucumber, cut into 1’’ quarters
- 1 lb Roma tomates, quartered
- 1 bunch parsley, finely chopped
- 1 package fresh dill, roughly chopped
- 3 oz capers, drained
- 1/2 small red onion, julienned
- 6 oz feta cheese, crumbled
- 8 dates, roughly chopped
Instructions
- In a small mixing bowl, combine the olive oil, tahini, za’atar, lime juice, salt, preserve lemons. Set aside.
- Set aside a few sprigs of dill and about 1/4 cup of feta to garnish. In a large mixing bowl, combine the tomato, cucumber, parsley, dill, capers, red onion, dates, and feta cheese. Drizzle the dressing over the salad and toss until just combined. Garnish with remaining feta cheese and dill.
- For the board:
- Arrange on a large board or platter the salad, in the center, with the dressing on the side.
- Lay down the pita bread, cut into wedges, or pita chips, around the outside, with pita chips on the other side, and serve!
