White Peach Goat Cheese Appetizer
This simple White Peach Goat Cheese Appetizer is perfect for summer entertaining or a light snack, made with fresh white peaches and fresh thyme!
Without much fanfare, my husband recently turned 50. He was a few years behind me, so he has now has caught up! :)
We’ve been enjoying quiet moments, such as floating down the Deschutes River several times, and visiting with friends in our area.
The beauty of nature. There’s no better way to celebrate a BIG birthday than in the great outdoors!
New book released today
Part of celebrating this fantastic year is also celebrating my hubby’s new book that is released today, No More Christian Nice Guy—revised and expanded edition.
His initial book was written over 10 years ago, and continues to help lives (now in 7 languages). :)
Last week we had visiting friends over for dinner, and we got the last of our new appliances installed in the kitchen just half an hour before they arrived. Even with no countertops, and many unfinished projects in our house, we were still able to share time together around the table.
I’m so glad that we don’t feel this need to have everything perfect in our home, because it’s going to take some time to get there. LOL. We are doing all the work ourselves, so the DIY projects are a little slower paced. We don’t have a big team, like Fixer Upper (which, by the way, we LOVE that show!), we are the TEAM :)
All you need is a kind of surrounding that is comfortable and safe, to show the way of hospitably. And then add in some good food, and people who you love!
Life long friends are a rare gift, and we never want to take for granted the people in our lives. As scary as it may be, we’re also looking forward to inviting new people into our home!
White Peach Goat Cheese Appetizer
So with white peaches, little crackers, goat cheese, and fresh thyme, I made a quick appetizer.
So summery fresh, with our favorite white peaches.
If you use thin crackers like I did, you need to make these right before your guests arrive, because of the peach juice (which can potentially make the cracker soggy).
But within 10 minutes, we were sitting on our front porch, enjoying these bites with a glass of wine, and our very precious friends.
Life does not get sweeter than this.
Even at age 50! :)

White Peach Goat Cheese Appetizer
Ingredients
- 1 white peach
- Crackers
- Goat cheese, softened
- Fresh thyme
Instructions
- Lay crackers out on a platter or tray.
- Peel and slice the peach. Set aside.
- Spread the softened goat cheese on each cracker. Lay a slice of peach on top.
- Garnish with fresh chopped thyme; serve!

YUM! Looks good. When we started building our house (which we are still doing, and doing ourselves), I would laugh when someone would say “oh we are building a house too”…I wanted to say “no, you are having someone else build your house, you’re not doing anything”…lol it takes a lot of time and energy to do everything yourself. You don’t have a team and you probably don’t have a full 8 hours a day, everyday to devote to it.
