A Good Time at Dinner with Light Lemon Cheesecake Mousse


Lemon Cheesecake Mousse

When our niece and nephew came for dinner last week, Lisa had asked if we wanted “lemon or chocolate.” We love either, so we said “surprise us!”

Lemon it was! Which makes sense, since it’s Meyer Lemon season!

What a yummy dessert they brought, perfect for Easter, if you’re looking for an EASY recipe to make for a large crowd, because you make ahead and store in the fridge.

Pull the ramekins out when it’s time to for dessert, garnish, and serve!

Lisa used reduced fat cream cheese, so I’m including that in this recipe. Good girl! It does make a difference with calories, for sure, and they were fabulous!

Our guests came at 6, we mingled around this appetizer for a relaxing hour, and then enjoyed a lovely meal together (served this salmon recipe).

But the best part … dessert!

And then, sitting around the table a little bit longer.

I’m pretty sure it was close to 11 pm when we all got up from the dinner table.

The time element for me is indeed a barometer of a good time.

Wouldn’t you say that many hours around the table of good food and talk, means a successful time?
