Peach Ricotta Toast

Peach Ricotta Toast
This easy 6-ingredient toast recipe with fresh peaches and creamy ricotta is on our summer menu. We love how you can substitute the peaches for nectarines. Or even apricots, cherries, or berries! You can also make whipped ricotta toast!
But let’s talk peaches. Peaches are the one fruit that says “summer.” In Oregon, I grew up eating plenty of summer peaches, and even helped my mom can them. When eaten at their ripest, they are so sweet, tender, and juicy.

Gather these ingredients
- Toasted baquette slices (or you can use bagel crackers)
- Ricotta cheese: optional to whip it first
- Peaches
- Cherry or heirloom tomatoes
- Balsamic glaze: we use DeLallo brand
- Fresh basil
How do you make peach crostini?
- Spread the ricotta cheese on the baguette or bagle crackers. Sprinkle with peaches and tomatoes.
- Drizzle with balsamic glaze. Sprinkle finely chopped basil on top. Serve!
Tips and substitutions:
- Bread. We use baguettes, but you can also try thick slices of a crusty sourdough loaf, or french bread or any other crusty bread.
- Air fryer: Either toast in the oven, or you can spritz olive oil and toast it in the air fryer, which makes it delicious and crisp!
- Ricotta: We use whole milk ricotta, but you can use whatever you like or have on hand. Optional to whip the ricotta. You can also use Burrata cheese or cottage cheese!
- Balsamic glaze: If you dont’ have balsamic glaze, you can try warm honey. Don’t skip this step.
- Peaches: You could also try nectarines, plums, or even any summer berry!
- Basil: This herb really balances the sweetness of the peaches and tomatoes.
I made this appetizer for one of the parties we attended. How simple can you get, with sweet peaches (yes, early in the season, but they were delicious), and juicy tomatoes? This is the perfect summer appetizer!

- 16 bagle crackers or 16 toasted baguette slices
- ¼ cup ricotta cheese
- 2 peaches, chopped in small pieces
- 8-10 small cherry or heirloom tomatoes
- Balsamic glaze, I use DeLallo brand
