Breakfast casseroles for breakfast or brunch
Last week we hosted 2 sets of overnight company. My favorite … every morning I made breakfast, we served coffee, and we sat around the table. For hours.
What is it about being fresh in the morning, when life is new and light?
It’s my privilege to think ahead (it takes planning to host out-of-town guests), to plan food for company, whether a delicious dish like today’s recipe, an overnight Ham Breakfast Casserole, or this Overnight Monte Cristo Breakfast Casserole :)
Red Tart Cherries
Today I’m sharing a delicious recipe made with apples and Oregon Fruit’s Red Tart Cherries. Which, by the way, there are many health benefits that align with tart cherries, and cans are available at national retailers, including Walmart.
Oregon Fruit carries many different varieties–Gooseberries, Blueberries, Red Raspberries, Blackberries, Red Sweet Cherries, and more–but my favorite are their Sweet Tart Cherries.
German Pancake Recipe
Whip up the ingredients, and bake like a giant German Pancake!
It’s dotted with tart cherries; the tender apple bake is sweetened with brown sugar, butter, and a little cinnamon.
Pour the egg mixture on top.
You can serve as a breakfast, brunch, or potluck dish.
Perfect for the holidays!

I like to have muffins, quick breads, and fruit on-hand for quick breakfasts during the busy holiday season. If we’re having a more leisurely meal then we have bacon and/or sausage, eggs, and pancakes or waffles. If my kids want to cook, they make a breakfast casserole or a fritatta.
My favorite breakfast to serve for the holidays is buttermilk panklcakes with apple crumble on top, bacon on the side, eggs (if ya want em).
We have a tradition of making waffles and topping them with strawberries and whip cream, it’s so good and I look forward to having it for Christmas morning. I pinned the recipe. Thanks
Hi. My favorite breakfast to serve is Linguisa and eggs over easy. As a child my dad made the linguisa then smoked it in the smoke house. Noe days you can purchase it ready to cook. Add some toast, good coffee and everyone is thrilled with breakfast. I sure would love to have these pans to make that special breakfast on thanksgiving.
