Some days are tender for some, because we all have hurts and divisions, but coming together for a meal brings a lot of healing.

Hosting for breakfast

Last week we hosted 2 sets of overnight company. My favorite … every morning I made breakfast, we served coffee, and we sat around the table. For hours.

What is it about being fresh in the morning, when life is new and light?

It’s my privilege to think ahead (it takes planning to host out-of-town guests), to plan food for company, whether a delicious dish like today’s recipe, an overnight Ham Breakfast Casserole, or even a stylin’ yogurt bar with Pumpkin Seed Granola :)

Red Tart Cherries

Today I’m sharing a delicious recipe made with apples and Oregon Fruit’s Red Tart Cherries. Which, by the way, there are many health benefits that align with tart cherries, and cans are available at national retailers, including Walmart.

Oregon Fruit carries many different varieties–Gooseberries, Blueberries, Red Raspberries, Blackberries, Red Sweet Cherries, and more–but my favorite are their Sweet Tart Cherries.

Whip up the ingredients, and bake like a giant German Pancake!

It’s dotted with tart cherries; the tender apple bake is sweetened with brown sugar, butter, and a little cinnamon.

Apple Cherry German Pancake Recipe

Ingredients

  • 4 to 5 medium tart apples sliced
  • 1 14 oz Oregon Specialty Fruit, Red Tart Cherries, drained
  • 6 Tbsp. brown sugar
  • 1 1/2 tsp. ground cinnamon divided
  • 3 Tbsp. butter
  • 6 large eggs
  • 1-1/2 cups orange juice
  • 1-1/2 cups all-purpose flour
  • 3/4 tsp. salt
  • 2 Tbsp. brown sugar
  • Maple syrup optional

Instructions

  • In a large skillet, saute the apples, brown sugar, and 1 teaspoon cinnamon in butter until apples begin to soften, about 6-8 minutes. Transfer to a greased 13×9-in. baking dish.
  • Add a can of drained Oregon Red Tart Cherries.
  • In a blender, combine the eggs, orange juice, flour and salt; cover and process until smooth. Pour over apple mixture. Sprinkle with sugar and remaining cinnamon.
  • Bake, uncovered, at 425° for 20 minutes or until a knife inserted near the center comes out clean.
  • Serve with syrup if desired. Yield: 8 servings.

  6. Wow! That looks and sounds so delicious. My family and I love to make omelettes but we like to set up a little station with the ingredients and all of the extras that you can add in depending on who likes what. It’s always a huge success and the kiddos love it too!
