Breakfast casseroles for breakfast or brunch
Last week we hosted 2 sets of overnight company. My favorite … every morning I made breakfast, we served coffee, and we sat around the table. For hours.
What is it about being fresh in the morning, when life is new and light?
It’s my privilege to think ahead (it takes planning to host out-of-town guests), to plan food for company, whether a delicious dish like today’s recipe, an overnight Ham Breakfast Casserole, or this Overnight Monte Cristo Breakfast Casserole :)
Red Tart Cherries
Today I’m sharing a delicious recipe made with apples and Oregon Fruit’s Red Tart Cherries. Which, by the way, there are many health benefits that align with tart cherries, and cans are available at national retailers, including Walmart.
Oregon Fruit carries many different varieties–Gooseberries, Blueberries, Red Raspberries, Blackberries, Red Sweet Cherries, and more–but my favorite are their Sweet Tart Cherries.

Whip up the ingredients, and bake like a giant German Pancake!
It’s dotted with tart cherries; the tender apple bake is sweetened with brown sugar, butter, and a little cinnamon.
Pour the egg mixture on top.
You can serve as a breakfast, brunch, or potluck dish.
Perfect for the holidays!

I love to serve fresh baked cinnamon rolls. I only make these when I have guests, so it’s a treat for my family, too.

One of our very favorites is German pancakes. I usually make them plain and then add assorted fruits, but this looks sooo good! I will make this apple cherry one and devour it with a smile!
I pinned your delicious recipe. Thanks for sharing. I know it will be delish. Your recipes always are. I have never used canned Oregon fruit, but just checked online and my local store carries it….yea!

i pinned this on my Sounds Yummy board – and it certainly sounds yummy – my favorite breakfast for a group is an egg casserole (french bread, cheese, lots of bacon, mushrooms, onions).
I pinned this (will definitely make) recipe on my Breakfast board (Anne Pikula).
Yummy savory breakfast quiche with eggs, onion, cheddar cheese & canned corned beef. Don’t knock it until you’ve tried it! My kids’ most favorite Christmas morning breakfast meal.
