Ingredients for best chicken thighs

  • Boneless chicken thighs
  • Coconut aminos, or soy sauce
  • Kosher Salt, don’t use salt if using soy sauce
  • Honey
  • Pressed garlic
  • Veggies: large bell peppers and sweet onion

This week we’ve grilled tri tip and Best Grilled Chicken Thighs on our brand new grill.

My KITCHEN TIP is to double up on the amount of meat when we are grilling, so we have leftovers for meals later in the week.

For instance, we love leftover tri tip for this light summer dinner: Tri Tip Crostini. So good!

How to make Best Grilled Chicken Thighs marinade

This is one of my go-to marinades for grilling. It’s so simple, you won’t believe it.

  1. Just think “3-part” soy sauce (we use coconut aminos to make it gluten free), honey, and water! Optional to add garlic!
  2. Mix together and marinate overnight!

Best Grilled Chicken Thighs

There's no need for cooking inside: Summertime is here and we're grilling Best Grilled Chicken Thighs with delicious summer veggies.
If you use coconut aminos (gluten free), add 1 1/2 tsp. Kosher salt. If using soy sauce, do not add extra salt.
Prep Time: 10 minutes
Cook Time: 15 minutes
marinating: 4 hours

Ingredients
 

Marinade

  • 2 pounds boneless chicken thighs, trimmed
  • ¾ cup coconut aminos, or soy sauce
  • 1 tsp. Kosher Salt, don’t use salt if using soy sauce
  • ¾ cup honey
  • ¾ cup water
  • 1 Tbsp. pressed garlic

Veggies

  • 2 large bell peppers (yellow, red, or orange), cut in large chunks
  • 1 LARGE sweet onion, cut in large chunks

Instructions
 

  • In a large bowl, combine the coconut aminos (or soy sauce), honey, water, and garlic.
  • Trim the fat off the chicken thighs and tenderize (optional).
  • Place the chicken and marinade in a large Ziploc bag and seal tight, releasing the air out of the bag.
  • Marinate overnight, or a minimum of 4 hours.
  • Grill the chicken and serve with your favorite side dishes!
  • OPTIONAL: Grill the peppers and onions at the same time as chicken
