Everyone has a “best” breakfast casserole, don’t they? But this one truly is the BEST. Every time I go “home”, my friend Jenny makes me this for breakfast. It’s soooo good, and very simple. Perfect for Father’s Day weekend!
Best Sausage Breakfast Casserole
This is now one of our easy go-to breakfast dishes (like my Ham Breakfast Casserole and Monte Cristo Breakfast Burrito Bake). We love this sausage filled breakfast recipe for weekends or out-of-town company!
How to make sausage breakfast casserole
This recipe has the usual ingredients, but there’s something about the way it puffs up in the pan, nice and thick, with lots of sausage and cheese. Jenny uses turkey sausage, but I also mixed it up with sweet Italian sausage and regular Italian sausage (one pound of each). Either way, it’s delish. It’s probably more of a preference of calories!
All you need are these ingredients:
- Trader Joe’s Mini Sourdough Boule Bread
- Ground turkey sausage, or 1 lb. each of sweet Italian sausage and regular Italian sausage
- Salt and pepper
- Milk + eggs
- Garlic salt
- Dried mustard
- Sharp cheddar cheese (or your favorite flavor)
- Sour cream, salsa, green onions chopped or chopped cilantro (optional)
Make Ahead Breakfast Casserole
This recipe is easy to assemble it the night before. My routine is to pull it out of the fridge right when I get up in the morning. It’s okay to sit out for an hour or so before baking. Making a “make-ahead” breakfast casserole sure makes “making breakfast in the morning” nice and easy!
Substitutions for breakfast casserole
- Change out the meat for bacon or a variety of sausage flavors
- Use rustic cubed bread (you don’t have to use sour dough)
- Add the flavors of cheese that you love! (We’ve used Sharp Cheddar, Mozzarella (really cheesy and stringy), Pepperjack cheese, and more
- Place chopped tomatoes and mushrooms into the milk egg mixture poured over the top

Can you freeze breakfast casserole after cooking?
A baked breakfast casserole may be frozen up to 2 months. Remove from the freezer and thaw in refrigerator overnight. Bake at 350ºF for about 20 minutes or until heated through.
If you want to make ahead and freeze this casserole: Freeze unbaked casserole up to 2 months. I like to cover it tightly with plastic wrap and then foil.
We served this recently!
This particular breakfast was spontaneous and fun, with our friends from out of town who invited their kids. It’s good to be spontaneous with our hospitality, so we don’t miss out on shared moments. It also takes us out of our comfort zones, and stretches us to be more flexible. I sometimes feel for very rigid people, and how uptight their lives must be.
Celebrating the good life sometimes means you practice hospitality on a whim!

Best Sausage Breakfast Casserole
Ingredients
- 8 oz Trader Joe’s Mini Sourdough Boule Bread
- 1 - 1 ½ lbs. sausage, browned, drained (ground turkey sausage or half of each of sweet Italian sausage and regular Italian sausage)
- Salt and pepper
- 2 ½ cups milk
- 10 eggs
- 1 tsp garlic salt
- 2 tsp dried mustard
- 2 ½ cups sharp cheddar cheese, or mixed cheeses
- Sour cream, salsa, green onions chopped or chopped cilantro or basil (optional)
Instructions
- Spray a 9 x 13 pan with cooking spray. Set aside.
- Tear the bread into bite-sized pieces, and cover bottom of pan with the bread.
- Cook the sausage, and season with garlic salt, salt and pepper.
- Spread the ground turkey sausage over bread.
- Cover the mixture with 2 cups of grated cheese (leaving 1/2 cup for the topping).
- Mix eggs, milk, mustard, and garlic salt and pour over bread/turkey/cheese mixture.
- Sprinkle remaining cheese on top.
- Cover with foil, and leave in the fridge overnight.
- Bake at 350 for 1 hour with foil ON. Remove foil, baking an additional 10 minutes.
- Allow to set for 5-10 minutes before serving.
- Serve with salsa, sour cream, cilantro or basil (optional).
do you have to let it sit overnight?
You do not. You can make it either way!

Do I let the casserole sit overnight before I freeze it or can I freeze it right after I assemble it?

I would freeze it after it is baked and cooled. Wrap it tightly!
The Trader Joe Boule bread is 16oz so make sure you use only half the loaf. I found 2lbs of sausage to be a lot; probably can use 1lb and it will be delicious. Also, no need to add extra salt; the sausage usually has enough unless it’s completely unseasoned. Looking forward to baking and eating in the morning!
