Fresh summer fruit with burrata
I often have an excess of fruit laying around my kitchen in the summertime. This salad makes use of any extra fruit you may have–strawberries, melons, blueberries, raspberries, even peaches. Sweet summer produce tastes delicious with sharp arugula, salty prosciutto, sweet and refreshing mint, and rich balsamic dressing.
Use up what you have on the counter!
What is burrata cheese?
Burrata is an Italian milk cow cheese, made from mozzarella and cream. The outer shell is solid mozzarella, while the inside contains a soft-textured stracciatella and cream. In the directions, we mash it open with a fork or spoon for serving.
How to prepare the burrata salad
- Spread the arugula in a large bowl. Top with the burrata cheese.
- Using a knife, score the top, season with a pinch of salt and pepper, and drizzle with olive oil.
- Continue layering the melon, strawberries, walnuts, and mint.
- Drizzle with balsamic dressing and serve cold.
Sweet days of summer
When I think of sweet days of summer, I also think of all the friends who we’ve been blessed to see this season!
Longtime and new friendships are the best. Longtime … it’s like there has been no time that has passed by. You pick up where you left off.
New friends … how exciting it is to get to know new people and learn about their lives!
For Paul and me, we never want to get in a rut, where we don’t reach out to others. It’s important for us, and has been a life mission for our hospitality goals.
By the way, two things. Have you read my RE Manifesto?
I’ll end with this classic quote:
“Make new friends, but keep the old; one is silver and the other, gold.”
