Cantaloupe Avocado Raspberry Salad
This delightful Cantaloupe Avocado Raspberry Salad screams summer! A deconstructed salad placed on a tray, arrange the cantaloupe and avocado and drizzle with a honey lime dressing. Topped with cilantro and feta cheese, this salad has a beautiful presentation and flavors are out of this world.
Friends, we’ve been enjoying dinner on our front deck almost every night. Oh, the sweetness of summer! Even if it’s just me and Paul and the boys, or if we’re hosting another couple, life is sweet this time of year!

It smells so good, when not only the food comes off the grill, but the pines around us give off the warmest, sweetest summer scent. It’s heavenly living in the woods, in our “sort-of-tree-house.”
Yes, we feel as if we’re in a tree house at times, with our wrap-around deck.

There’s something about this time of year, not too hot, not too chilly (or if it is, grab a sweater), that is so welcoming for enjoying meals outside. Later this summer, well that is a different story.

All it takes is a pretty tablecloth and your standard dishes (even paper plates). I have a stack of 20 white dinner plates on my open shelves that I use almost daily.
Looking out …. I thought to myself, I like it!

A beautiful deconstructed salad with a light dressing. Perfect!
Made with sweet cantaloupe and coveted (around here) avocados, the dressing is light and the flavors are perfect.
How to have an “I like it” attitude:
1. Be confident. Decide that your style is what you like and don’t worry about what others will like. For me, if we’re eating outside, I’ll have a tablecloth, standard dishes, and always paper napkins (thank you IKEA).
2. Mix it up. Use inexpensive flowers, glass jars, simple dishes, rustic tumblers, napkins, plants or flowers from the yard. It doesn’t all have to match perfectly. This time, a simple lovely fern.
3. Messy is fine. No one should look at the table and be afraid to spill or make a mess. A casual, messy look is fine, and sometimes more attractive. I always throw my tablecloths in the wash, and if they’re white, I bleach them. Easy!
4. Attitude: It’s all about attitude and loving the people you are with. Learn to relax, sit back and ENJOY! Even if something spills. :)

Cantaloupe Avocado Raspberry Salad
Ingredients
- 3 Tbsp. fresh lime juice
- 4 tsp. honey
- 1 Tbsp. plus 2 tsp. olive oil
- 1/2 tsp. kosher salt
- 1 cantaloupe, 3 pounds, seeded, rind removed, thinly sliced
- 2 avocado, halved, pitted, skinned, and thinly sliced
- 1 cup raspberries
- 1/2 cup feta cheese
- Fresh cilantro, finely chopped
Instructions
- 1. In a small bowl, whisk together lime juice, honey, oil, and kosher salt; set aside.
- 2. Slice the cantaloupe lengthwise into thin slices, rind removed.
- 3. Cut each avocado half again length-wise and then into thin slices.
- 4. Arrange cantaloupe, avocado, and raspberries on a large platter; drizzle with dressing.
- 5. Sprinkle with feta cheese and chopped cilantro. Lightly salt; serve!
