Dishes like this broccoli casserole are always super popular. It’s great when you can take leftover meat and add veggies, to make a “one pot” dish. We also love that you can start off with frozen broccoli. The leftovers are great reheated the next day, too.

Gather these ingredients

  • Broccoli – frozen – chopped
  • Ritz Crackers – crushed
  • Unsalted butter – melted
  • Minced onion – dried
  • Parmesan cheese
  • Cream of Celery soup
  • Sour cream
  • Cooked chicken (shredded or cubed)
  • Frozen cooked potatoes (the smaller chunks the better, or you can use hash browns)
  • Sharp cheddar cheese
  • Bacon – cooked and crumbled (optional)

How to make Chicken Broccoli Potato Casserole

  1. Grease a 9×13 inch casserole dish with nonstick spray.
  2. Crush the Ritz crackers and set aside.
  3. Add (to the baking dish) the frozen broccoli and sprinkle with the minced onion and parmesan cheese. Add in one can of cream of celery soup, sour cream, the chicken, and potatoes.
  4. Mix the ingredients together in the 9×13 inch dish using a large spoon.
  5. Melt the butter and add half of the crushed Ritz crackers to a separate small bowl. Mix until combined.
  6. Add the other half of the Ritz cracker mixture to the broccoli mixture and combine.
  7. Sprinkle the remaining cracker mixture on top of the broccoli casserole.
  8. Grate the cheese on top. Optional to add crumbled bacon on top (so yummy!).
  9. Bake at 350 degrees F, uncovered, for 40 minutes.
  10. Remove from the oven, serve, and enjoy!

Tips and substitutions

We have not tried it yet, but we wonder what cauliflower rice would taste like, or what the texture would be? Would you try it?

  • Use any kind of cream soup (mushroom, chicken, etc.). What’s in your pantry?
  • You can leave out the protein (chicken or bacon) and make the dish vegetarian. It’s just as good.
  • Optional to use fresh broccoli but make sure it’s pre-cooked (or use your air-fryer first).
  • Use rice in place of potatoes.
  • Hash browns work as well as frozen potatoes (or leftovers from the night before).
