Citrus Salad
This time I took a beautiful wood platter that my husband made me from one of the trees on our property, and made a very simple, elegant Fresh Citrus Salad with Mint.
This would be a lovely salad to make for Easter, as it’s a beautiful presentation.
You could even add a few berries on top!
It couldn’t be easier, and it looks gorgeous on a big, platter of your choice.
How to Make Fruit Salad
For this recipe, follow the easy instructions below, but if you are not big citrus fans, then you may love my Fresh Fruit Salad with Poppyseed Dressing or Grilled Fruit Salad with Creamy Lime Dressing [A Spicy Persepctive], or Basil Fruit Salad [Barefeet in the Kitchen].

Visiting Grover’s Corner
We stayed in the little farmhouse that was Bill Gaither’s grandparents’ place, Grover’s Corner. Grandpa Grover’s farm had no internet or television, but had a sweet round table in the kitchen, where my hubby and I would have coffee every morning, and the family piano in the living room (the 2 things I vividly remember). Of course I spent hours playing the piano, as Paul was off speaking.
It was a beautiful few hours, where I got lost in the music–books that I thumbed through and found my favorite hymns and classic Gaither pieces, playing the beautiful heirloom piano. Just this week, I remembered a book that my mom loved, and a favorite quote of hers from Gloria Gaither. It reminded me of how quickly we are moving through life now, and how much I want to hold tight to the sounds, the memories, the moments that we have today.

Our 3 kids are home this weekend. Of course our mommy and daddy hearts couldn’t be happier. I wish we could freeze the moments, but we can’t.
Layered Fresh Citrus Salad with Mint
With Easter right around the corner, for this salad, all you need is assorted citrus fruits, some mint, and Sweetened Dried Lemon Slices. (I buy these at Trader Joe’s, and here’s another fabulous recipe to try with these lemons!)
If you’re being asked to bring a salad for Easter, this is the perfect dish to present to the host, and you can even slice and arrange it right before serving!

Layered Fresh Citrus Salad with Mint
Ingredients
- 6-8 assorted citrus fruits, ruby red grapefruit, cara cara oranges, blood oranges and tangerines, thinly sliced
- 10-12 pieces Sweetened Dried Lemon Slices
- 2 Tbsp. fresh mint leaves, chopped or small pieces
- 2 Tbsp. sugar, optional
Instructions
- Using a good serrated knife, thinly slice the fruit and arrange on a large platter.
- Layer the different sizes, colors and flavors, starting with the largest slices on the bottom (the grapefruit).
- Right before serving, sprinkle sugar over the fruit (optional).
- Sprinkle with fresh, chopped mint leaves, and top with Sweetened Dried Lemon Slices.
