This Crustless Salmon Gruyere Quiche Recipe is delicious made with leftover salmon, a breakfast dish to serve to out-of-town company or breakfast guests!
It’s just after 5 a.m. as I send out this email, still completely dark outside. But my friend Jenny and I have already said “Good morning” via the internet. It’s just how we start off the day! :)
Living in the same town for so many years, I truly do miss many of my friends that I had daily contact with. But now with texting and email, and even picking up the phone and calling (rare, I know), we can keep in touch, and send pictures or funny Facebook animal stories.

Summer, 31 years ago. I was 23 when I met Jenny in the medical office we worked at. She was one of our nephrology nurses, and I was working across the way in the dialysis clinic.
We became fast friends, and she’s one of my best friends today.
Now we resort to weekend camping, or visiting each other in our homes.
It’s when you start the day off “in real life,” instead of an email or text.
Usually with coffee and breakfast.
Crustless Salmon Gruyere Quiche Recipe
It’s when you whip up a quick, easy breakfast (made with leftover salmon).
Throw together these simple ingredients: Eggs, cheese, half and half, salmon, green onions, garlic, and delicious spices.
I usually make 2, because it’s also really good left over.
It’s when you sip on your coffee, talk about the mission of the brand and why you drink that brand of coffee, and you scrape the last of the cheese with a fork off the plate.
The setting where we actually chew our food, taste the flavor, and feel the person’s language from across the table, we see what’s really going on in their eyes, and we listen.
It’s called friendship. It’s caring, and a good dose of heartfelt, good old-fashioned empathy and love.
Shauna Niequist reminds us: We live in a world that values us for how fast we go, how much we accomplish, how much life we can pack into one day. But it’s in the in-between spaces that our lives change, and that the real beauty lies.
I say let’s bring back slow, leisurely, satisfying breakfasts again, where you sit for hours with your friends.

Crustless Salmon Gruyere Quiche Recipe
Ingredients
- 6 large eggs
- 3/4 half and half, or whole milk
- 2 cups shredd Gruyere cheese
- 1/2 tsp. salt
- 1/2 tsp. crushed red pepper flakes
- 1 Tbsp. dried basil
- 1 cup salmon, I used leftover salmon from the night before
- 1 Tbsp. butter
- 1/4 cup sliced green onions
- 2 cloves garlic, minced
Instructions
- Preheat oven to 375 degrees F. Combine eggs and half and half in a medium bowl; whisk until well blended. Add the cheese, salt, red pepper flakes, and dried basil; mix and set aside.
- In a skillet, saute green onions and garlic in butter for 1-2 minutes. Turn the heat off and stir in the already cooked salmon (gently, okay to leave in large chunks).
- Add the salmon and green onion mixture to the egg mixture; gently mix together.
- Spray a 9-inch pie plate with cooking spray. Pour mixture into pie plate.
- Bake for 30 minutes or until egg mixture is set. Let stand 10 minutes before serving.

Absolutely delicious with a minor modification to the amount of red pepper flakes as I am not a fan of that spice.
Yum! I never thought to put salmon in a quiche, but it sounds wonderful
