This year we hosted an alfresco summer party–pizza and this Marinated Summer Veggie Salad– at our new mountain home!

Our kids were all home, we invited a special guest, and we cooked up a summery-fresh appetizer, Corn Chorizo Dip, and enjoyed the evening in simplicity and style!

For this gathering, we brightened up the table with a white linen tablecloth, paper napkins, and fresh aspen clippings for the centerpiece. And this is my favorite summer salad to take to picnics, potlucks, or serve at a pizza party!

Ingredients for fresh vegetable salad

  • English cucumber, cherry tomatoes, bell peppers, red onion
  • Fresh cilantro, dill, and basil
  • Jalepeno
  • Salt & pepper
  • Olive oil
  • Lemon and lime

Summer Veggie Salad

The Marinated Summer Veggie Salad was also a party hit. I like to call it “summer in a bowl,” because it’s everything we love … cucumbers, tomatoes, peppers, onions, and tons of fresh herbs. Make your own lemony vinaigrette—DELISH!

It takes intentional planning to make these special times happen, even if it’s not super-fancy–sometimes it’s simply about serving good food, and just being together!

Marinated Summer Veggie Salad

Ingredients
 

  • 1 large English cucumber, cut into 1-inch pieces
  • 2 cups cherry tomatoes, halved
  • 1 yellow bell pepper, cut into 1-inch pieces
  • 1 red bell pepper, cut into 1-inch pieces
  • 1 green bell pepper, cut into 1-inch pieces
  • 1/2 small red onion, diced
  • 1 bunch fresh cilantro, roughly chopped
  • 1 bunch dill, roughly chopped
  • 1 bunch basil, roughly chopped
  • 1 jalepeno, diced (optional)
  • Salt & pepper
  • 1/3 cup olive oil
  • 1 lemon, juiced
  • 1 lime, juiced and zest

Instructions
 

  • Whisk olive oil, lemon juice, lime juice and zest together in a bowl; pour over veggies pieces; toss to coat.
  • Refrigerate until chilled, about 1 hour. Top with more fresh chopped herbs if desired.
