Last summer we hosted a summer pizza party in our old backyard. This year, I’m back with an alfresco summer party at our new mountain home!
It’s a party dream to host in the great outdoors in central Oregon, with warm nights and beautiful skies. Let’s just say, there’s always a warm, magical touch.
Our front deck is our secret place, our hideaway place, as if we’re in a tree fort. We’re surrounded by aspen and fir, and it’s a fun place to relax, sip on our favorite drinks, and eat a bite of something yummy—pizza!

We’ve found that everyone seems to LOVE a pan-style pizza! (And a yummy side salad, like this Marinated Summer Veggie Salad.)

What’s not to love about this?
Taking it a step further, we pre-sliced the pizza (everyone’s favorite Pepperoni, and a meat-lover’s Three Meat Pizza) and served it as the main course for our party!
Entertaining is all about putting your own spin on how you like to serve food! With so many casual ways, it’s super-fun to make your summer table fit your style!
For this gathering, we brightened up the table with a white linen tablecloth, paper napkins, and fresh aspen clippings for the centerpiece.
Our kids were all home, we invited a special guest, and we cooked up a summery-fresh appetizer, Corn Chorizo Dip, and enjoyed the evening in simplicity and style!
Marinated Summer Veggie Salad
The Marinated Summer Veggie Salad was also a party hit. I like to call it “summer in a bowl,” because it’s everything we love … cucumbers, tomatoes, peppers, onions, and tons of fresh herbs. Make your own lemony vinaigrette—DELISH!
It takes intentional planning to make these special times happen, even if it’s not super-fancy–sometimes it’s simply about serving good food, and just being together!

This is my favorite summer salad to take to picnics, potlucks, or serve at a pizza party!
Marinated Summer Veggie Salad
- 1 large English cucumber, cut into 1-inch pieces
- 2 cups cherry tomatoes, halved
- 1 yellow bell pepper, cut into 1-inch pieces
- 1 red bell pepper, cut into 1-inch pieces
- 1 green bell pepper, cut into 1-inch pieces
- 1/2 small red onion, diced
- 1 bunch fresh cilantro, roughly chopped
- 1 bunch dill, roughly chopped
- 1 bunch basil, roughly chopped
- 1 jalepeno, diced (optional)
- Salt & pepper
- 1/3 cup olive oil
- 1 lemon, juiced
- 1 lime, juiced and zest
- Whisk olive oil, lemon juice, lime juice and zest together in a bowl; pour over veggies pieces; toss to coat.
- Refrigerate until chilled, about 1 hour. Top with more fresh chopped herbs if desired.
