Easter Carrot Appetizer with Boursin
I love Easter, and I love putting out tasty and cute appetizers for friends and family when they come by for Easter brunch or dinner. This Easter Carrot Appetizer with Boursin cheese are not just fun to make and look at, but they’re delicious, too! You can make these tasty eats ahead of time, but be sure to make plenty because they’ll get gobbled up!
I love Boursin cheese, and it’s an integral part of this appetizer recipe. It’s rich, creamy, crumbly and spreadable. It’s so good, and now you can get it in a variety of different flavors. I also love that it works in so many different recipes, like this Easter Carrot appetizer.
Easter Carrot Appetizer with Boursin
Dress up sturdy crackers, Boursin cheese, and carrots in these fun Easter appetizers, and watch everyone ooh and ahh over them! They’re such a festive and delicious treat, and you can make them ahead of time, so all you need to do is put out a platter and watch them disappear. If you need to feed a crowd, put these out on my 12×36-inch Big Board. This portable board with raised sides is perfect for taking outside to the patio, to the living room, or wherever your guests are mingling.

Gather these ingredients
- Sturdy crackers – You’ll need about 48 crackers. I love using Lesley Stowe Raincost Crispcotti, the pineapple and Thai basil flavors, but any sturdy (firm) cracker will suffice.
- Boursin Gournay cheese – 2 5.2-ounce packages in your flavor of choice.
- Carrot chips – Grab 2 16-ounce packages of carrot chips from the produce section of your grocery store. Can’t find them? See my tips below.
- Fresh dill – You’ll need 2-3 packages of fresh dill.
How to make Easter Carrot Appetizers with Boursin Cheese
- Remove the Boursin from the packaging and palace it in a large bowl. Add 3 tablespoons of warm water and mix it well with a spatula or wooden spoon until it is soft and smooth.
- Place 4 rows of 12 crackers on the Big Board.
- Spread the cheese evenly onto each cracker.
- Cut the carrot chips so they have a rounded top and a pointed bottom, and resemble a carrot.
- Place the carrot chip on top of the cracker, but don’t press them down.
- Cut the dill stems into 48 smaller pieces, so that each looks like the top of a carrot.
- Place the dill at the top and slightly under the carrot slice, then pressn down gently.
- Serve and enjoy!
Tips & Substitutions
- You can use any cracker for these, but make sure they’re pretty sturdy to hold up to the spreading of the Boursin.
- Boursin cheese will be much easier to work with at room temperature. Take it out of the packaging 30-40 minutes ahead of time. Adding water makes it nice and soft.
- You can use room temperature cream cheese, or whipped cream cheese, in place of the Boursin. Use flavored cream cheese or add a bit of dried dill to it to jazz it up.
- Open the bag of carrots and pull out the large flat carrot chips (don’t use any of the broken ones).
- You don’t have to eat the dill! It’s pretty flavorful. Save the leftover dill for recipes like Dill Pickle Pasta Salad or Lemon, Dill & Shallot Grilled Salmon.
Serving suggestions
I love serving these Easter carrot canapes on my Big Board for any kind of spring gathering, but especially for Easter. Everyone loves the fun carrot on top, and they’re tasty, too! These are great before a hearty ham and Potato-Fennel Gratin, but they’re also a delish addition to Easter brunch. Or, put a few of these out for snacking on an Easter charcuterie board. The possibilities are endless!

Easter Carrot Appetizer with Boursin
Ingredients
- 3 5.3 oz boxes Lesley Stowe Raincoast Crispcotti, pineapple and thai basil crackers (or use any large Lesley Stowe or sturdy cracker)
- 2 5.2 oz Boursin Gournay cheese, any flavor
- 2 16 oz bags Carrot Chips
- 2-3 packages of fresh dill weed
Instructions
- Remove the Boursin cheese and place in a large bowl. Add 3 Tbsp of warm water and mix it well until soft and smooth.
- Open the crackers and place 4 rows of 12 on a big board (48 bites).
- Spread the cheese onto each cracker.
- Open the bag of carrots and pull out the large flat carrot chips (don't use any of the broken ones).
- Cut the carrot chips to a point on the bottom (rounded part on top) to make the shape of a carrot. Place each carrot chip on the cheese. Don’t press down yet.
- Cut the dill of the stem to make 48 small pieces (to look like the top of a carrot).
- Place the dill at the top of the carrot, under the carrot chip, and press down .
- You can refrigerate before serving so they stay nice and fresh.
- Set out and enjoy at Easter!
