Gather these simple ingredients
For the dressing:
- Peanut Butter: or any nut butter with a crunch
- Fresh ginger + garlic
- Olive oil
- Fresh lime juice
- Rice vinegar
- Dark brown sugar
- Honey
- Soy sauce: or you can use coconut aminos
- Chili paste, or some other hot sauce (optional)
- Peanuts: optional to chop for topping
- Kosher salt and black pepper
For the lettuce cups:
- Chicken: we use a rotisserie chicken
- Shredded red cabbage: you can mix in any kind of chopped cabbage
- Shredded carrots
- Red bell pepper
- Cilantro
- Boston bibb lettuce: or any lettuce that has sturdy lettuce leaves
Use a crunch-like textured peanut butter, preferably with no artificial flavors, colors or preservatives, and zero trans fats per serving.
You can also make this recipe gluten-free–a perfect snack for the summer months!
Optional to serve with our Asian Chicken Cranberry Salad (crowd-pleaser!)
How do you make lettuce wraps?
- Make the dressing in a food processor or blender by adding the peanut butter, ginger, garlic, oil, lime juice, vinegar, honey, sugar, soy sauce.
- Blend until smooth; salt and pepper to taste.
- Next, make the wraps. In a large bowl, toss the chicken, cabbage, bell pepper and cilantro.
- Add dressing to taste and toss.
- Arrange lettuce into two-ply cups and fill each with a scoop of the chicken. Serve!
Tips and substitutions:
- Instead of using rotisserie chicken, you can use ground chicken or ground turkey or beef. You can also use pulled pork.
- If you want to make vegetarian lettuce wraps, use tofu.
- Add your favorite veggies, like mushrooms, more bell peppers, and even zucchini. Fresh cucumbers also add a refreshing crunch.
- Use any nut butter: We’ve also used almond butter and cashew butter for this recipe. Make sure the nut butter has a crunch to it.
- You can garnish the wraps with fried rice noodles!
- Serve on the side sriracha mayo, chili garlic sauce, or peanut sauce.
- Optional to use the meat mixture in a lettuce wrap, or for grain, noodle, or rice bowls. Delish!

Ingredients
For the dressing:
- ½ cup Peanut Butter, or any nut butter with a crunch
- 1 Tbsp. grated fresh ginger
- 1 clove of garlic
- ¼ cup olive oil
- ¼ cup fresh lime juice
- ¼ cup rice vinegar
- ¼ cup dark brown sugar
- 2 Tbsp. honey
- 2 Tbsp. soy sauce
- 1 Tbsp. chili paste, or some other hot sauce (optional)
- Kosher salt and black pepper
For the lettuce cups:
- 1 rotisserie chicken, meat roughly chopped (not shredded), bones and skin discarded
- 2 cups shredded red cabbage, or a mix of colored cabbage
- 1 cup shredded carrots
- 1 red bell pepper, seeded and finely chopped
- ½ cup chopped fresh cilantro, loosely packed
- 1 head Boston bibb lettuce, or any sturdy lettuce leaves
Instructions
- Make the dressing in a food processor or blender by adding the peanut butter, ginger, garlic, oil, lime juice, vinegar, honey, sugar, soy sauce. Blend until smooth; salt and pepper to taste.
Make the wraps:
