Friends, Christmas is over, and I’ve taken down my tree and done my usual winter cleaning. Instead of spring cleaning, for me, the time after Christmas always warrants a little deep cleaning to get the pine needles, dust and dirt I’ve neglected out of the house.
Time to open the windows, air out the house, freshen up (or change out) the pillows, toss the winter greens and droopy amaryllis blooms, and start over.
It’s also time to think about New Year’s and drop-in guests.
Although I’d say our family loves a good charcuterie board, this week we’ve served these delicious Easy Lobster Roll Sandwich Recipe.
Mm-m-m, lobster. Each bite is a savored treat.
Make the lobster mixture ahead.
We love adding fresh dill.
Right before serving, heat a pan and griddle the rolls for about 2 minutes, until golden brown.
That is the secret to the most buttery, toasty bread :)

Easy Lobster Roll Sandwich Recipe
Ingredients
- 2 lbs. fully cooked lobster meat or 4 packages, 8 oz each refrigerated imitation lobster chunks, cut into bite-size pieces.
- 2 cups finely diced cucumber
- 3/4 cup mayonnaise
- 2 teaspoons minced fresh dill
- 6 small scallions, very thinly sliced 1 teaspoon kosher salt
- Salt and pepper to taste
- 1/4 cup unsalted butter, softened
- 12 Artisan Bread - Brioche Rolls, I buy at Trader Joe’s
Instructions
- If using live lobsters, steam or boil them. Cut the meat into 1/2-inch pieces.
- Combine the lobster, cucumber, mayonnaise, and dill (or chervil). If the salad is to be served within the hour, add the scallions (or chives). If not, add them 30 minutes before serving. Season with salt, if needed, and pepper. Cover with plastic wrap, and chill for at least 30 minutes before serving, or as far ahead as the night before.
- Right before serving, preheat a griddle over medium-low. Salt and pepper to taste.
- Lightly butter the insides of the rolls. Griddle them for about 2 minutes, until golden brown. Stuff the toasted rolls with the chilled lobster salad; serve!

I agree……right after Christmas (well New year for me) is a great time to deep clean. I usually wait til the new year to take things down, but I think this year it will be this weekend since I have to drive to seattle on the 1st to pick up my oldest and her hubby from their airport. Not gonna want to take down decor after that.
