I say comfort food, and of course this Friendsgiving Pasta Bake Board!

The name Friendsgiving is a mix of “friends” and “Thanksgiving,” and people usually make their Friendsgiving celebrations a potluck party, to minimize the stress for the host, and where everyone can simply relax and enjoy.

Serve this board (with the best turkey pasta dish), a side salad (we love this Waldorf Brussels Sprout Salad), and then a lovely cake for dessert. So good!

You can ask your guests to bring a dish, or ask them to bring the beverages!

Forget about perfect!

I think one thing that prevents us from practicing hospitality is thinking that our homes have to look perfect before anyone can stop by. With Thanksgiving here this month, let’s forget about perfect, and embrace the love and community around our tables!

Most likely no one will even notice the trouble spots in our homes. HA! I call them “trouble spots” because they cause my mind a lot of trouble. Sometimes I get frustrated when I don’t accomplish everything on my mental list, and then I worry about the silly things when company comes. For instance, create one space where you will serve your board, and make that space clean, organized, and pretty!

  1. Reserve a space for the board and any side dishes.
  2. Set out a stack of dinner plates, forks, and napkins.
  3. Make sure the drinks are nearby.
  4. Guests can either take their plate to the table, or sit in the living room by the fire.
  5. Optional to put the “big board” in the center of the table and let guests serve themselves.

Ingredients
 

Friendsgiving Pasta Board:

  • 8 oz havarti cheese
  • 9 oz uncured Genoa salamii
  • 9 oz Italian tomato bruschetta
  • Creamy Calabrian Chili Pasta Bake, RECIPE BELOW
  • 1 large bunch green grapes
  • Dried apricots
  • 1 EACH red anjou pear, Honeycrisp apple, blood orange, sliced
  • 1 persimmon
  • 1 pomegranate
  • Rosemary, for garnish
  • Sesame crostini crackers
  • Crispy focaccia toasts
  • Grissini breadsticks
  • Seasoned Olive Medley
  • Cashews
  • Pistachios, in shells
  • Grape leaves

Creamy Calabrian Chili Pasta Bake:

  • 2 Tbsp olive oil
  • 4 cloves garlic, crushed
  • 2 Tbsp oregano
  • 1 ½-2 Tbsp chopped Calabrian chilis
  • 2 Tbsp flour
  • 1 ½-2 lb deli turkey breast, ½’’ cubes
  • 1 c Delallo Crushed Italian Tomatoes
  • 1 ⅓ c heavy cream
  • 3 c low moisture mozzarella cheese, grated
  • 1 ½ c provolone cheese, grated, divided
  • 1 lb shellbow pasta, or similar kind
  • 7 oz Delallo Pitted Gigante Green Olives, quartered

Instructions
 

  • Preheat oven to 375 degrees. Prepare your baking dish—a 9x13 or similar size; spray with oil and set aside.

Make the Calabrian Chili Mornay Sauce:

  • In a large saucepan over medium heat, add olive oil. Once hot, add garlic, season with salt and and pepper, then lower heat to medium-low; cook 3 minutes, then add the Calabrian chilis and oregano; cook 2 more minutes. Add the flour and whisk semi-frequently for 2-3 minutes. Once the flour has toasted, whisk in the heavy cream and milk; cook down on medium-low heat for 4-5 minutes. Finally, add the tomato sauce and continue reducing until thickened—8-10 minutes. Taste for salt, then remove from the heat, and stir in half of the mozzarella and 1 cup of provolone cheese until combined. Set aside.

Boil the Pasta:

  • In a large pot, add 3 quarts of water and salt heavily. Bring to a boil and add pasta. Cook 7-8 minutes (this depends on the pasta)—make sure to drain the pasta 1-2 minutes before it reaches al dente, because it will cook further in the oven. Drain the pasta, leaving a bit of water in the pot (1/4 c) and return the pasta to the pot.
  • Pour the cheese-chili tomato sauce over the pasta and add the turkey breast. Pour the reserved pasta water over all and stir to combine for about 2 minutes as the sauce thickens.

Bake the pasta:

  • Pour the pasta into your prepared pan and sprinkle with the olives and remaining cheeses. Cover with parchment and foil and place on the center rack. Bake, covered, for 25-28 minutes, or until bubbling on sides. Remove the foil and parchment and return to oven for 15 minutes more. Finish by broiling, still on the center rack, on high heat for 2-3 minutes to brown the top.

Build the board:

  • Serve hot on a BIG BOARD. Build the board around it (make sure it's placed on a hot pad), with breadsticks, meats, cheese, fruit, olives, crackers.
  • Garnish with sprigs of fresh rosemary and a persimmon!
