Friends, here’s a simple dinner to get on the table that I just love. This egg and green chili casserole is made with cottage cheese and ham, but you can add your favorite meat. Green Chili Egg Casserole is an easy overnight breakfast casserole that is perfect for any weekend morning, brunch, or holidays!
Holiday breakfasts are special, at least in our home! We love to pull out the stops, with brunch boards, overnight casseroles, and breakfast cakes and breads. You can have this recipe on the table in less than an hour.
You can set out additional toppings and really stretch the meal, like lettuce, tomatoes, sour cream, salsa, olives, and more.
It makes a great dinner, too!
Ingredients for Green Chili Egg Casserole
- Butter
- Cottage cheese
- Monterey Jack cheese
- Diced ham: you can also use bacon or sausage
- Diced green chilies
- Eggs
- Flour
- Baking powder: this makes the egg bake nice and fluffy!
- Salt
How to make Green Chili Egg Bake
- Set butter in a 9×13-inch casserole dish; place dish in the preheating oven until butter is melted.
- Mix cottage cheese, Jack cheese, green chiles, eggs, flour, baking powder, and salt in a large bowl using an electric hand mixer. Pour mixture into the melted butter in the casserole dish.
- Bake in the preheated oven for 15 minutes. Reduce heat and bake until middle of casserole is set. Allow to stand before cutting into squares for serving.
How do you serve a breakfast casserole with green chilis?
The diced green chilis give this egg bake just the right amount of flavor, without making it overly spicy. We love to serve ours topped with salsa verde, but regular salsa would be delicious too.
As mentioned above, serve it with additional taco ingredients, like lettuce, tomatoes, green onions, sour cream, salsa, olives, and more.
Tips and substitutions:
- Make it overnight: It’s super easy to put together the night before, to make your morning a breeze.
- You can also make the recipe keto or gluten-free. Skip the flour and the baking powder, but note that the texture will be different.
- Make it gluten-free by switching out the all-purpose flour for a gluten-free flour, like Bob’s Red Mill.
- Not a fan of cottage cheese? That’s okay, because you’ll never notice the “cottage cheese” taste in this recipe. It really does make it soft and creamy! Don’t skip the cottage cheese.
- Swap out the shredded cheese for your favorite flavors. Instead of the Monterey Jack, you can use Pepper Jack, sharp cheddar, or even goat cheese. Goat cheese is delicious in egg casseroles.
Get creative! You can add extra meat, diced scallions, or diced jalapeños if you like it spicy.
What if you don’t like green chilis?
The diced green chilis add a distinct, spicy flavor, so if you don’t like the heat, use “mild” diced green chilis. You will have the option in the grocery store to buy mild or hot. They are small little cans found in most grocery stores.

Ingredients
- ¼ cup butter
- 1 16 ounce package cottage cheese
- 8 ounces shredded Monterey Jack cheese
- 1 cup diced ham, or bacon
- 2 4 ounce cans diced green chiles, drained
- 12 eggs
- ¼ cup all-purpose flour
- 1 teaspoon baking powder
- ½ teaspoon salt
Toppings:
- sour cream, salsa, chopped tomatoes, chopped green onions
Instructions
- Preheat oven to 400 degrees F (200 degrees C). Set butter in a 9x13-inch casserole dish; place dish in the preheating oven until butter is melted.
- Mix cottage cheese, Jack cheese, green chiles, eggs, flour, baking powder, and salt in a large bowl using an electric hand mixer. Pour mixture into the melted butter in the casserole dish.
- Bake in the preheated oven at 400 degrees for 15 minutes. Reduce heat to 350 degrees; bake until middle of casserole is set, about 30-35 more minutes. Allow to stand for 10 minutes before cutting into squares for serving.
- Optional to serve with a spoonful of sour cream and salsa, or chopped tomatoes, and sprinkle with finely chopped green onions.
