Ingredients for grilled chicken skewers

  • Chili powder + cumin + paprika + garlic powder + cinnamon
  • Salt and pepper
  • Lime
  • Chicken breasts
  • Pineapple + mango
  • Cilantro
  • Peppers for grilling

Keep a hospitable heart

Now for entertaining: Don’t worry about all the plans that you make, because much of the time things fall through, people come late, you change your menu at the last minute, or timing throws everything off. And if you’re a rigid soul, then you feel all fidgety and upset and … you forget about love.

My advice: Keep a hospitable heart (which reminds you, it’s all about the people, not food or the timing) and love the people around your table. Put love first.

I’m been reading Bob Goff’s book for the past month, Everybody Always. To sum it up, his book points out the call to Love. To, you know, be love. It’s all in the way that we act.

Which means we have to actually do it, not just talk about it.

SO for me in my life, my household, I have to come up with ways to practice love, to love people, to show love. It’s actually pretty easy for me, because I’m a hospitality lover!

There are ways to love anonymously, too. I recently heard of a need of a single mom at church, so I sent a Fred Meyer gift card. She has no idea who we are, and that is not the point. The point is to reach out and help and love!

Pineapple Mango Grilled Chicken Skewers

Make skewers ahead and refrigerate for grilling later!

Ingredients
 

  • 1 Tbsp. chilli powder
  • ½ Tbsp. cumin
  • ½ tsp. paprika
  • 1 tsp. garlic powder
  • 1 lime, juiced
  • 1 tsp. cinnamon
  • Salt to taste
  • 1 ½ pounds of chicken breast, cut into 1-2 inch cubes
  • ½ pineapple, cut into 1 inch cubes
  • 1 mango cut into 1/2 inch cubes
  • Cilantro
  • Grilled peppers, grill on the side for garnish

Instructions
 

  • Wash, dry, and tenderize chicken, then cut into 1-2 inch cubes. Place in large bowl, then toss with chili powder, cumin, paprika, garlic powder, cinnamon, salt, and lime juice.
  • Place 1 piece of chicken, one piece of pineapple, another piece of chicken, a cube of mango, and one last piece of chicken on each skewer. Repeat until chicken, pineapple, and mango are used.
  • Heat grill to high. When hot, spray skewers with oil (to get grill marks) and place on grill for 15-20 minutes—flipping once midway through.
  • At the same time, grill peppers for garnish (optional).
  • Garnish with cilantro, lime, and grilled bell peppers.
