Hawaiian Burgers

Pineapple is the star of the show on these easy grilled burgers. You’ll want to use fresh pineapple. Save yourself a step and get an already peeled and cored fresh pineapple from the grocery store. Then, all you need to do is slice it. So easy!

Gather these ingredients

  • Ground chuck – Look for 80% lean ground beef.
  • Pineapple – You’ll need 6 ½-inch cored slices.
  • Traeger seasoning – Or your favorite burger seasoning spice.
  • BBQ sauce – Use your favorite sauce.
  • Cheddar cheese – 6 thick slices.
  • Bacon – 12 slices, cooked and drained.
  • Brioche buns – Or 6 of your favorite bakery-fresh burger buns.
  • Red onion – Sliced thinly.
  • Butter lettuce leaves – Washed and dried.
  • Heirloom tomatoes – 2 large tomatoes, sliced.

How to make the best Hawaiian Burgers

  1. Cook the bacon ahead of time. I love doing it in the oven. Line a baking sheet with foil and bake it at 350-F for about 20-30 minutes or until it gets to your desired level of crispiness. Drain it on a paper towel and set aside.
  2. Remove the rind and core and slice the pineapple into ½-inch slices. Sprinkle with your favorite Traeger seasoning and set it aside.
  3. Form the ground beef into ¼ to ½ pound patties. Press your thumb into the middle of each patty to allow the beef to cook evenly. Season liberally with your favorite Traeger seasoning.
  4. Cook the patties on a hot grill until they reach the desired internal temperature. Try to only flip the burgers once, and don’t smash them with a spatula or all the juices will run out.
  5. Baste the burgers with your favorite sauce after flipping.
  6. When the burgers have reached your desired level of doneness, top each with a slice of cheddar cheese and push them to the side to a cooler part of the grill with no flame to keep warm.
  7. Cook the pineapple for about 1 minute per side turning them 90-degrees halfway through the cooking time to get nice hatch marks on the pineapple. 
  8. Toast the buns for 1-2 minutes or until lightly toasted.
  9. Assemble your burger by adding a patty to the bottom half of a bun. Top the patty with 2 slices of crispy bacon, more BBQ sauce if desired, 1 slice of grilled pineapple, red onion slices, lettuce leaves and a thick slice of tomato. Add the top bun and dig in!

Tips & substitutions

  • Don’t overmix the ground beef or your patties, or your burgers could be tough and dense. Make the patty larger than the size of your bun, as they’ll shrink some when cooking. And don’t forget to press an indentation into the middle of the burger. This will help them from puffing up and shrinking too much when cooking.
  • You can use precooked bacon and save yourself some prep time.
  • You can make the burger patties and prep all your other ingredients ahead of time so all you need to do is cook, assemble your burgers, and eat.

Storage

Store unassembled leftover burgers in the fridge for 1-2 days. You can also freeze the leftover patties, but the toppings won’t freeze well.
