Burger Taco

These tacos are more than just a burger patty inside a tortilla. In fact, you cook the burger and the tortilla together at the same time. This way, all the juicy beef flavor cooks into the tortilla and adds even more goodness and flavor to each bite.

Don’t forget the pickles! You can add lettuce, tomatoes, and all your favorite burger toppings to these meaty tacos, but the pickles really cut through the rich beef and add much-needed tanginess to the tacos.

Gather these ingredients

  • Ground beef – You’ll need about 1.5 pounds cooked and drained. Use 80/20 beef for this recipe.
  • Salt and pepper
  • Garlic powder
  • Worcestershire sauce
  • Flour tortillas – Use small, 6-8 inch tortillas. Ensure they’re flour tortillas; corn tortillas will fall apart.
  • Red onion – Minced.
  • Sharp cheddar cheese – Sliced.
  • Iceberg lettuce – Shredded.
  • Roma tomatoes – Diced.
  • Dill pickles – Sliced rounds.
  • Burger sauce or taco sauce – Optional, but so good!

How do you make a burger taco?

  1. Prepare a grill or a large skillet for cooking. Heat it over high heat just before cooking the Burger Tacos.
  2. Combine the cooked and drained ground beef, salt, pepper, garlic powder, and Worcestershire sauce in a bowl and mix well.
  3. Line a sheet pan with parchment paper and lay down 6 tortillas so they’re not overlapping on the pan. 
  4. Divide the meat mixture evenly on each tortilla, smashing it down on the tortilla. Flatten the meat into a thin layer that covers the entire tortilla. See my tips below for help on doing this.
  5. Sprinkle the tacos with the diced red onion and press the onions into the meat. 
  6. Transfer your beef-covered tortillas to the skillet, beef side down, and press the tortilla down with a spatula while they cook. Cook for 2-3 minutes.
  7. Flip the tortilla over so the beef side is facing up, and add a slice of cheddar. Cover with a lid and cook until the cheese has melted.
  8. Transfer the taco to a plate and garnish with shredded lettuce, chopped tomatoes, red onion, dill pickles, and burger sauce.
  9. Repeat with the remaining tacos, and enjoy!

Tips & substitutions

  • Really press the meat onto the tortilla. I use a burger press to do this, or you can use a spatula, bottom of a glass, or a flat plate. You want the meat in a thin but edge-to-edge coating of beef.
  • Use flour tortillas, not corn. Corn tortillas will fall apart. You can even make mini Burger Tacos if you use the real small tortillas.
  • Watch your heat so that the burgers don’t burn.
  • Have all your toppings sliced and chopped and ready to go so that you can dig into these tasty tacos as soon as they’re ready.

Serving suggestions

You can serve Burger Tacos with any other of your favorite burger or taco side dishes. I love these tacos with baked beans, Spicy Black Bean Salsa, or a fabulous salad with a light dressing.

Storage

Burger Tacos, especially if they’re loaded with toppings, are best eaten fresh. If you have leftovers, store them in the fridge for 3-4 days. Reheat them in a skillet until warmed through.

  • In a medium bowl, combine the beef and seasoning (salt, pepper, garlic powder, Worcestershire sauce).
  • Prepare a large sheet pan with parchment paper, and lay down 6 tortillas (flat). TIP: You have to use flour tortillas. Corn does not work, as they don’t hold up.
  • Divide the meat mixture evenly onto each tortilla, smashing it down on the tortilla. Flatten the meat into a thin layer that covers the entire tortilla. TIP: We use a burger press but you can also use the bottom of a water glass or a spatula.
  • Sprinkle with the minced red onion, then using the press again, press the onions into the meat. You will have 6 tortillas with pressed beef (and onion) all the way to the edges.
  • Over high heat, lightly brush a skillet with oil/and or make sure the grill is smoking hot.
  • Place the tortillas beef side down, and using a spatula, continue to press and flatten the tortilla while it cooks for 2-3 minutes.
  • Next, flip the tortilla over and add a slice of the Sharp Cheddar Cheese to the hot meat.
  • Cover the pan with a lid, or cover the grill, until the cheese melts.
  • Remove and plate each Burger Taco, then add shredded Iceberg lettuce, chopped tomatoes, more red onion (optional), dill pickles, and burger sauce.
  • Add a few sprinkles of taco sauce and enjoy!
