Crustless Bisquick Quiche Pie

This Impossible Quiche Pie is a great hospitality dish to share with others for breakfast or brunch. It’s an easy quick recipe with no crust, made with Bisquick (or you can make your own mix). You can also make a bisquick quiche with fresh spinach.
How to make Impossible Quiche (bisquick) Pie
We love this recipe because it’s easy, quiche is delicious for breakfast, lunch, or dinner and it’s great as leftovers.
You can also use up the veggies or meat in your friends, with a variety of combinations that makes this quiche pie so good! Make it your own with zucchini, broccoli, spinach, or mushroom.
Impossible Quiche Pie Ingredients:
- Milk
- Bisquick (or your favorite baking mix, like Pamelas)
- Eggs
- Cheese (Sharp Cheddar, Pepper Jack, Gruyere, or Swiss)
- Salt and pepper
- Meat: bacon, sausage, ham,
- Veggies: grated zucchini, onion, tomatoes, mushrooms, broccoli (cooked first), mushroom, green onion, red onion
- Herbs: fresh cilantro
- Toppings: sour cream, chopped tomatoes, salsa
How to Make Impossible Quiche Pie
My friend Kristi shared this recipe with me about 10 years ago, and my mom made this when I was a kid.
- Spray a 9×13 pan with cooking spray (or a round Le Creuset braiser).
- Blend together the milk, baking mix, eggs, cheese, salt, and pepper.
- Pour over your choice of these ingredients in the bottom of the pan: Bacon, sausage, ham, chilies, grates zucchini, tomatoes, mushrooms, green onions, red onions.
- Sprinkle with fresh basil or cilantro.
- Bake. The quiche may be slightly jiggly in the center, which is okay. Allow it to sit for 5 minutes before cutting into it.
- Cut into servings and serve with your favorite toppings, such as sour cream, salsa, tomato, or more herbs.
How do you make your own Bisquick (or baking mix?)
Mix together 1 cup flour, 1/4 t salt, 1 1/2 baking powder, and 1 tablespoon butter.
Tips and substitutions:
This time we added bacon, green chilies, tomatoes and grated zucchini this recipe, but there are so many options.
Want to use leftover ham? Delicious with ham, cheese, and green pepper.
Make a BLT with bacon and tomatoes, served with lettuce on top, with a drizzle of a light basil dressing.
What’s the easy base recipe? Milk, eggs, cheese, and a baking mix. (You can use Bisquick or Pamela’s for gluten-free).
This Impossible Quiche Pie is an easy dish to make if you’re involved in a meals ministry at church (taking meals to those in need) or a neighborhood meal chain.
Buy disposable pans, like these deep foil pans (9×13) to make this recipe in BULK, so the recipients don’t have to get the dish back to you!
But this recipe also works beautifully in this 3.5 quart braiser, which we used in these photos.

Ingredients
Meat:
- 1 cup Bacon, sausage, ham

Instructions
- Heat oven to 400. Spray a 9×13 pan with cooking spray (or a round Le Creuset braiser).
- Blend together the milk, baking mix, eggs, cheese, salt, and pepper.
- Pour over your choice meat and chopped, drained veggies (about 2 cups worth).
- Sprinkle with fresh basil or cilantro.
- Bake for 40-45 minutes. It might be slightly jiggly in the center. Rest for 5-10 minutes before serving.
- Serve with your favorite toppings!

Oh how I laughed when I read your post. And I can relate. I don’t know if it’s age or what but I forget so much stuff these days! I think the problem is that our family has been so busy lately that some things just slip through the cracks. But I usually glance at my to do list at and then remember at the last minute…and am scrambling like you were the other day.
I have a small social circle of friends and we all help each other when things like this happen. I have a friend like yours, her name is Kristin, who is such a go-to-girl. She has all sorts of quick and easy recipes and is always ready to pitch in and help me out when I forget something. She is also one of those wonderful ladies who you and Sheila would just love. Kristin is always ready with a meal when someone needs it.
And I think she is a wonderful example for all of us. She has 4 young children and is a single parent but still manages to help out others while taking really great care of her kids! :-) She doesn’t try to be perfect or come over with perfect meals when you’re sick or in need. She comes with a smile, a hug, and simple meal – usually a one pot sort of dish, something that she has made for her family and doubled it – but it all makes you feel loved and cared for. I think she’s the best.

Has anyone tried this with a gluten-free baking mix? I’m thinking this would be an easy one to adapt. Yee haa! And yes, Sandy, I’ve forgotten things many times…just wish I had Kristi next door – both for a running buddy and a buddy brain! You are both blessed. :)
