It’s made with iceberg and romaine lettuce, chicken, sun-dried toamtoes, and a creamy dressing that is out of this world. Perfect for a small gather yet easy enough for a dinner party!

I love classic wedge salads, and I also love a good Caesar Salad. This salad has both types of lettuce, deconstructed with both blue cheese, Parmesan cheese, bacon, tomatoes, and it’s a party fave! Grab your epic salad bowl (we are using our 21-inch epic bowl), and make this for your next gathering. It feeds about 12 guests.

We explained the Marry Me Chicken origin, having posted our first Marry Me Chicken dish last week. It’s a recipe trend for sure, that typically includes chicken, sun-dried tomatoes, herbs, cream, and parmesan cheese. Iceberg lettuce works perfectly with the thick, chunky homemade blue cheese dressing, since it’s sturdy and can hold up to such a hearty dressing. This is a delicious holiday salad for Valentine’s Day – will you marry me? :) As much as I know dark leafy greens are better for me, I do love a crisp iceberg salad, or a crunchy Caesar salad.

Why I love this salad

  • It’s a crowd-pleasing sturdy (not soggy) salad with amazing creamy buttermilk dressing.

What ingredients do you need to make a Marry Me Chicken Salad?

  • Crunchy Lettuce: Both Romaine lettuce hearts and Iceberg lettuce – both lettuces are crunchy and hold the dressing well (no sogginess).
  • Protein: We use both bacon and cooked chicken. Rotisserie is our favorite because not only is it already cooked, it has great flavor. Chop up the bacon and chicken!
  • Sun dried tomatoes: You can use dried sun-dried tomatoes or you can buy them in oil. I personally think the ones in oil have better flavor. Both are found in the “Italian food” section in the grocery store.
  • Cherry tomatoes (heirloom are amazing in the summertime).
  • Fresh basil
  • Green onions
  • Cheese: Use both Blue cheese crumbles and Parmesan cheese.

Ingredients for Buttermilk Caesar Dressing:

  • Buttermilk
  • Mayonnaise
  • Sour cream
  • Blue cheese crumbles
  • Parmesan cheese
  • Garlic powder
  • Worcestershire sauce
  • Lemons
  • Fresh basil
  • Kosher salt and freshly ground black pepper

How do you make a combined wedge and Caesar salad?

  1. Prepare the lettuce: Remove the core from the iceberg lettuce and cut each head into 8ths. Chop the romaine hearts into bite-size pieces.
  2. In a large bowl, toss together romaine lettuce, and tear the iceberg pieces into large bite-size pieces. Mix together.
  3. Add the bacon crumbles, chopped chicken, drained and chopped sun dried tomatoes, cherry tomatoes, fresh basil, and green onions and toss.
  4. To make the dressing: Whisk together buttermilk, mayo, sour cream, 1/2 c of the blue cheese, 1/2 c of the parmesan cheese, garlic powder, Worcestershire sauce, lemon juice, and 2 tablespoons of the mixed herbs in a  bowl or large canning jar.
  5. Either whisk together until combined, or shake in a jar until mixed. Season to taste with salt and pepper.
  6. Pour dressing over salad, toss to combine, and top with remaining cheese combo (both blue cheese and Parmesan). 
  7. Add fresh cracked black pepper and serve!

Tips and substitutions:

  • We left off the anchovies, but feel free to add them in. Also you can add chopped eggs for a true Caesar salad.
  • For the sun-dried tomatoes, you can use dried or in the jar (with oil). We used in the jar (we love Delallo brand), and patted dry on a paper towel before chopping to add to the lettuce.
  • In the summertime, this salad is amazing with heirloom tomatoes (nice and juicy).
  • Herbs: We love basil, but you can also add in oregano, or both herbs.
  • In place of green onions, add chopped red onions.
  • I like the dressing more on the runny side, but you can always halve the buttermilk.
  • This recipe fits in the 21-inch epic salad bowl, and you can even double the recipe for a large crowd.

Serving

Serve for any party with charcuterie pizza, or an epic charcuterie board. You can also serve this salad with Ravioli Parmesan Soup and Air Fryer Garlic Bread. This Black Cherry Ice Cream is easy to make and fantastic for the dessert. Make these dishes and you’ll have quite the fun little dinner party (and delicious).
