I love a simple 3-ingredient recipe! Make up a pan of these Prosciutto-Wrapped Mini Bell Peppers and invite your neighbors, friends or family over for happy hour! If you want to have an appetizer party, you can serve these Boursin stuffed peppers with these Tasty Taco Mini Stuffed Peppers or these Taco Stuffed Peppers (larger bell peppers) for a summer meal!
Prosciutto-Wrapped Mini Peppers
Stuffed peppers are the ultimate summer meal! But they are also great for little bites. We’ve found that these are the first to be devoured at every party we bring them to. We recently set out a tray of these on our back patio, and sat with friends watching the sunset. I’m just saying, these are the perfect “summer bite.”

Why I love this recipe
- You literally pick up the bite (pepper) and pop it into your mouth, which makes a fun “popper” appetizer.
- Only 3 ingredients – easy to make last minute.
- They are delicious hot, warm, or even cold.
Gather these ingredients
- Mini bell peppers (I buy the big bag at Costco)
- Boursin cheese (buy at Costco in a pack of 3, keep on hand for easy entertaining)
- Fresh cracked pepper
- Prosciutto (I also buy at Costco, a 2-pack, that you can freeze)
- Fresh herbs in season
How do you make Boursin stuffed peppers?
- Cut the peppers in half. On a cookie sheet, arrange the pepper halves.
- Fill each pepper with Boursin cheese (spread it lightly).
- Wrap a long strip of prosciutto around each pepper.
- Add fresh cracked pepper.
- Bake at 425 degrees for 10-12 minutes.
- Garnish with fresh herbs and serve!
Tips and substitutions:
You can use cream cheese in place of the Boursin cheese. To make it zippier in flavor, add some Ranch dressing (make sure it’s soft, and mix well).
We love to make a big platter of these and serve with chips and dips!
Don’t forget the fresh black cracked pepper, and a sprinkle of fresh chopped herbs.
Enamelware Serving Tray
I love this Enamelware Serving Tray by LeCreuset, that I’m using in these photos.
It has a porcelain enamel durable coating, easy to clean, it’s shatterproof, and resistant to stains, scratches and rust. Use it for a tray to carry food or glasses to your deck, or as a food board!
Come back and tell me if you made this simple recipe. Tell me who you shared it with! We also love this appetizer served with this chicken, salad, and a great summer dessert.
