Why we love Puff Pastry Palmiers

The holiday season is upon us. Can you feel it? And these Puff Pastry Palmiers with Fig are always a hit at every party. The ease of making them is ideal for entertaining, and they are simply delicious.

The possible combinations of ingredients are endless (see below). But seriously, what isn’t good, wrapped in buttery puff pastry? :)

What are palmiers?

Palmiers are a simple French pastry. You may also know them as “elephant ears,” because the two two spirals of puff pastry joined together look like a big ear. In the classic sweet version, you sprinkle sugar over the pastry as you roll.

Be careful witih palmiers to not add too much filling, because it will make them too moist, and then they will not cook all the way through (or will be soggy).

You want the perfect balance of sweet and savory!

These fig and cheese savory palmiers, however, turned out perfectly.

Puff Pastry Palmiers

Ingredients needed:

This recipe comes together in a delicious flavor explosion – sweet meets salty, along with the crunch from the pastry.

Figs and cheese are one of my favorite combinations. Whether I make a cake or just pop a fig and walnut in my mouth at the same time, the flavor combination is great.

  • Puff pastry: buy it frozen, but thaw out before using
  • Parmesan cheese: crumbled or finely grated
  • Fig jam: or fig butter or fig preserves
  • Egg: plus water for an egg wash

How do you make palmiers?

  1. On a lightly floured surface or a sheet of parchment, roll your thawed puff pastry into a 12’’ square.
  2. Using a small offset spatula, spread fig jam into a thin layer to the edges of the pastry. Top with Parmesan cheese and pat into the jam. Fold the top and bottom edges towards the center, creating a smaller rectangle.
  3. Spread another layer of fig jam and Parmesan cheese. Press the cheese into the jam and fold the edges towards the center once more. Apply the remaining jam and more of the cheese, then fold the two sides on top of one another to create a heart-shaped log. Gently press together, wrap in plastic, and refrigerate.
  4. Using a sharp knife or kitchen string, cut the log into 16 slices, about 3/4’’-1’’ thick. Place on a lined baking sheet a few inches apart, brush with egg wash, and sprinkle with remaining Parmesan cheese.
  5. Bake, rotating halfway through baking. Remove from the oven when the palmiers are golden brown.

Serve warm. Delicious!

Cooking with figs this time of year

Figs are really at their peak this time of year, so we love making this Fig and Gruyere Puff Pastry Tart.

We love figs on appetizers, in raviolis, and other orejas or  sweet baked goodies.

This is such a great recipe. They’re great for parties (at home and work potluck parties). Everyone loves them, and we love how easy they are to make and how great they look.

Tips and substitutions:

  • Try cheddar cheese and some cooked pancetta with a sprinkle of fresh rosemary.
  • Ham and cheese is also very popular.
  • A classic taste is cinnamon and sugar. You can also add cardamom for an “ocean roll” flavor.
  • And of course, instead of fig jam you can use any other of your favorite jams or jellies!
  • You can use regular sugar for sprinkling if you don’t have cinnamon sugar, or you can make your own. It’s super easy and can be used for many other recipes.
  • Don’t use too much jam, because if you do the filling will be too moist, and then the pastry doesn’t fully cook.

Ingredients
 

  • 1 sheet puff pastry, thawed
  • 1 ½ c Parmesan cheese, crumbled or finely grated
  • 3 Tbsp fig jam or fig butter
  • 1 egg, whisk with 1 Tbsp water

Instructions
 

  • Preheat oven to 400 degrees F.
  • On a lightly floured surface or a sheet of parchment, roll your thawed puff pastry into a 12’’ square.
  • Using a small offset spatula, spread about 2 ½ Tbsp of the fig jam into a thin layer to the edges of the pastry. Top with ⅔ c of the Parmesan cheese and pat into the jam. Fold the top and bottom edges towards the center, creating a smaller rectangle.
  • Spread another layer of fig jam, about 1 Tbsp, and 1/3 c Parmesan cheese. Press the cheese into the jam and fold the edges towards the center once more. Apply the remaining jam and ¼ c of cheese, then fold the two sides on top of one another to create a heart-shaped log. Gently press together, wrap in plastic, and refrigerate for 15-20 minutes.
  • Using a sharp knife or kitchen string, cut the log into 16 slices, about ¾’’-1’’ thick. Place on a lined baking sheet a few inches apart, brush with egg wash, and sprinkle with remaining ¼ c of Parmesan cheese.
  • Bake for 15-25 minutes, rotating halfway through baking. Remove from the oven when the palmiers are golden brown. Serve warm.
