Some people turn up their noses at Brussels sprouts, but our family loves them. I have a scrumptious recipe with pancetta coming up (delish for Thanksgiving), but for today, I’m sharing this Shaved Brussels Sprout Salad with Lemon Honey Dijon Vinaigrette salad.
You may have also tried my popular Asian Chicken Cranberry Salad or Layered Harvest Quinoa Salad.
Shaved Brussels Sprout Salad with Vinaigrette
Toss the Brussels sprouts and romaine together.
Then add cheese, cranberries, almonds, and oranges, tossing with vinaigrette, and garnishing with fresh rosemary.
The dressing is light and fresh.

Have you ever noticed everyone rushing to this store and that, and to this dinner and that gathering?
Sometimes I get kinda caught up in it and feel I should be doing the same—when all I really want to do is cozy up on my couch with a cup of tea and our fluffy Whoodle.
Or eat hearty soups and crusty bread with friends who’ve become family (we have some great new friends here in our little hometown). Soups and salads are great to serve for a simple meal!
My calendar may at times look sort of empty (rare for me), and I wonder if I should be filling it with — more.
Slow down; enjoy the moments
This holiday season, let’s slow down and enjoy the moments.
I recently took a walk at dusk and grabbed the sunset in my mind for a memory. No phone, my husband was with me, and we both just sat with the chill of the air on our cheeks, for about 10 minutes.
Just taking it all in.
I plan to take it all in around our Thanksgiving table this year, too.
I cannot wait. Life is short; we need to savor it more.
Shaved Brussels Sprout Salad with Lemon Honey Dijon Vinaigrette
Ingredients
Lemon Honey Dijon Vinaigrette
- 1/4 c fresh lemon juice
- 1 Tbsp dijon mustard
- 1/4 c olive oil
- 1 1/2 Tbsp honey
- Salt to taste
Salad
- 3 c shaved Brussels sprouts
- 1 medium head of romaine, thinly chopped
- 1/2 c crumbled or shaven pecorino cheese
- 1/2 c dried cranberries
- 1/2 cup toasted almonds
- 1 fuji, pink lady, or honey crisp apple, chopped
- 1 11 oz can mandarin oranges
- Fresh rosemary to garnish
Instructions
- In a small bowl, combine all dressing ingredients together, and whisk until honey dissolves and dressing is smooth.
- In a large salad bowl, toss Brussels sprouts and romaine together. Next, add cheese, cranberries, almonds, and oranges, then toss with vinaigrette and garnish with fresh rosemary.
