These Quick Peanut Butter Cups are perfect for making ahead. Freeze, and wrap in holiday paper for hostess gifts!

No matter what holiday you’re celebrating, it’s always good to have a little gift to give in the closet, or the freezer!

People love homemade food gifts, especially when it comes to chocolate!

Ingredients for Quick Peanut Butter Cups:

  • maple syrup and salt
  • peanut butter, chunky or creamy (not processed, preferably unsalted)
  • Vanilla

It can’t get any easier than this!

As I always say here on RE, shared experiences are what we cherish and remember the most.

People first, gifts come last.

Expectations, comparing ourselves to one another, and perfectionism …. these are never allowed! :)

How to make Quick Peanut Butter Cups

You can use small, silicon molds if you don’t have a muffin tin or cups, but be aware that getting it in and out of the freezer can be difficult if its a flimsy container. If you use silicon molds, make sure to place the mold on a baking sheet to easily transport it to the freezer.

Additionally, the flake salt adds great texture and flavor, but it will disrupt the flatness of the top of your peanut butter cup (worth it in my opinion) so make a note of that.

  • c. virgin coconut oil
  • ½ c. unsweetened cocoa powder
  • 5 Tbsp. maple syrup
  • ¼ tsp. sea salt
  • 1 Tbsp. flake salt to garnish

  • 2 Tbsp. virgin coconut oil
  • ½ c. peanut butter, chunky or creamy (not processed, preferably unsalted)
  • 1 Tbsp. maple syrup
  • ¼ tsp. vanilla
  • ¼ tsp. fine sea salt, if PB is not salted

  • Line two mini muffin pans with 24 mini muffin cups.
  • To make the chocolate, microwave the coconut oil for 30 seconds in a small bowl, then stir in the cocoa powder, maple syrup, and salt.
  • Place a little less than 1 teaspoon of the chocolate at the bottom of each muffin cup—make sure to not use too much and save enough for the top. Put the muffin tin in the freezer until the chocolate solidifies, about 5 minutes.
  • Meanwhile, make the peanut butter filling. In a small bowl, melt the coconut oil, then stir in the peanut butter, maple syrup, vanilla, and salt until smooth.
  • Remove muffin pan from the freezer and spoon 1/2 tablespoon of peanut butter filling on top of the chocolate, then cover the peanut butter with the remaining chocolate—1-2 teaspoons. Place a pinch of flake salt on the top, then place peanut butter cups in the freezer until solid—15 minutes, which will give you a gooey peanut butter center, or 30 minutes for a hardened center.
  • Store the cups in an airtight container in the freezer and enjoy!
