Friends, do you ever run out of dinner ideas, especially when you need to go to the store? We’ve had so much snow, and I’ve been shopping a lot less. I’m ready for spring, just sayin’ :)

Slow Cooker Enchilada Pork

Luckily last week I had Trader Joe’s black beans, enchilada sauce, and salsa in my pantry (always), and a couple pork loins in the freezer. I experimented with a simple recipe, Trader Joe’s Slow Cooker Enchilada Pork, an easy crock pot recipe that you can serve as a main dish, in tacos, or even use to make enchiladas.

Of course these are easy ingredients to keep on hand, even if you don’t have a Trader Joe’s. But for those who do … one quick stop and you can get dinner going in the slow cooker today!

We loved this recipe for leftovers in “bowls” with rice, cheese, and a dab of sour cream and salsa on top.

Today I’m sharing the basic slow cooker recipe: Trader Joe’s Slow Cooker Enchilada Pork. That’s right, I bought all the ingredients at Trader Joe’s.

How to make Slow Cooker Pork

  • Defrost the pork loins, or use fresh pork. Spray the inside of a slow cooker.
  • Place the pork, beans, enchilada sauce, carrots, and salsa in the slow cooker and stir to combine.

  • For the carrots, I quickly used a peeler, but you can also grate them!
  • Cover and cook on high for 3-4 hours, or on low for 7 to 8 hours.

It’s really that easy–you do not need to brown the meat first, just place it all in the crock pot!

I love to make this recipe ahead and then keep them warm in my Instant Pot 8 Qt Aura Pro Multi-Use Programmable Multicooker. The instant pot does not have the pressure cooker feature, by the way, but I use this small appliance several times a week in my kitchen. I use it for the slow cooker and rice features the most. This is a “multi-use” cooker and I LOVE IT.

How to serve Slow Cooker Pork and Beans

When the meat is done, carefully remove the lid of the slow cooker.

You have two options, to either slice and serve, or using two forks, pull the meat apart into shredded pieces and mix right into the sauce.

Easy Slow Cooker Enchilada Pork

Serve the meat with tortillas for tacos, or use for enchiladas.

Optional to make pork enchilada bowls (add rice, lettuce, salsa, olives, tomatoes, avocados, cilantro, and sour cream). YUM!

You can also take the tortillas and roll up burrito style, slice in half, and serve!

Trader Joe’s Slow Cooker Enchilada Pork

We bought all ingredients at Trader Joe’s.

Ingredients
 

  • 2 lbs pork loin, trimmed of all visible fat (or 2 small loins)
  • Kosher salt
  • 2 cans, 15 oz black beans, drained and rinsed
  • 1 bottle, 12 oz Trader Joe’s enchilada sauce (red)
  • 1 12 oz jar Trader Joe’s Salsa Autentica
  • 3 small carrots, peeled and grated (or just peeled)
  • 12 10-inch flour tortillas
  • Optional toppings: sour cream, tomatoes, salsa, olives, cilantro, guacamole

Instructions
 

  • Spray the inside of a slow cooker pan with cooking spray.
  • Lay the pork loins on the bottom of the pan and salt with kosher salt. Add the rinsed and drained beans, enchilada sauce, salsa, and peeled (or grated) carrots.
  • Cover and cook on high for 3-4 hours or low for 7 to 8 hours.
  • When the meat is done, carefully remove the lid off the slow cooker. Using two forks (if you like), pull the meat apart into shredded pieces and mix with the sauce. Or, slice the meat and serve on a platter (using a slotted spoon), with the beans and carrots on the side.
  • Place the tortillas on a plate and heat on high in the microwave until warm, 30 to 45 seconds.
  • Serve with optional toppings as desired for tacos, or roll up burrito style, slice in half, and serve.

Notes

Optional Toppings: Mexican cheese, shredded romaine lettuce, sour cream, guacamole, tomatoes, olives, salsa, fresh cilantro.
