Summer Fruit Caprese Salad
Grab your favorite platter and start laying down your favorite summer fruit and berries! I’m all about the peaches (and white peaches are my fave!)
Ingredients for Caprese Salad with fruit
- Heirloom tomatoes, cut in large chunks
- Cherry tomatoes, stems removed
- Peaches, peeled, pitted, and cut into chunks
- Galbani Fresh Mozzarella marinated cheese balls
- Fresh basil, chopped
- Blackberries, optional
- Balsamic Glaze
How to make Summer Fruit Caprese Salad
- On a large platter, arrange the tomatoes and peaches. Next, lay down the cheese balls.
- Take some of the marinade from the mozzarella cheese and drizzle on top.
- Sprinkle with fresh basil and berries (optional).
- Right before serving, drizzle with balsamic glaze (also optional – details where to buy below).

For this week, gather your favorite summer flavors, like berries and cherries and apricots and peaches.
Don’t forget the heirloom tomatoes.
And Oregon berries!
Always fresh basil.
And a good quality mozzarella cheese (I buy these Galbani Fresh Mozzarella marinated balls from Costco in a 40 ounce container).
I always think of “home” when I enjoy summer produce.
It was always a staple on our table in the summertime, deconstructed, sliced, and devoured.
This time, combine it all together for the best summer salad!

Where to buy balsamic glaze? The cheapest way is to buy a pack of 6 (maybe share with a friends). We use it a LOT, so I’m happy to keep to many bottles on hand, plus I’ve given as “hostess gifts” many times. Because people say, where did you get the glaze? It’s so good!

Delicious! There were no peaches at the grocery store, so I used a nectarine, which was wonderful! Easy Peasy and refreshing!

You can make ahead, but don’t drizzle balsamic glaze until right before serving.
I made it for my family, delicious, easy and refreshing.
This looks absolutely divine. But left to myself I’d pick out all the berries and mozzarella and leave the rest for someone else. LOL! As hard as I try to like tomatoes and peaches, I just can’t seem to do it.
